- 2 tbsp honey
- 1 clove garlic, grated
- 1 tsp fresh turmeric, grated
- 1 tsp ginger, grated
- Salt and pepper, to taste
For the broth
- 2 tsp sesame oil (or substitute with avocado oil)
- 1 tsp ginger, grated
- 1 tsp fresh turmeric, grated
- 1 clove garlic, grated
- 1 tbsp coconut aminos
- 2 cups chicken bone broth
- 1 tbsp rice vinegar
- Salt and pepper, to taste
For the broccolini
- 1 tbsp avocado oil
- 1 bunch broccolini, trimmed
- 2 tsp coconut aminos
- Salt and pepper, to taste
To serve
- 2 cups white rice, cooked
- Green onion, chopped
- Sesame oil, for drizzling
Instructions
- Marinate the chicken: In a medium bowl, combine chicken thighs with coconut aminos, avocado oil, honey, grated ginger, turmeric, garlic, orange juice, salt, and pepper. Mix well to coat evenly. Cover and refrigerate for at least 30 minutes, up to 1 hour.
- Prepare the broth: In a pot on low heat, warm the sesame oil. Add grated garlic, turmeric, and ginger; sauté gently for 2 minutes until fragrant. Pour in chicken bone broth, coconut aminos, salt, and pepper. Cover and simmer on low for at least 30 minutes. Stir in rice vinegar at the end to finish the broth.
- Cook the broccolini: Heat avocado oil in a pan over medium heat. Add trimmed broccolini and sauté for 4-5 minutes until tender. Season with salt, pepper, and coconut aminos, stirring to coat. Remove from heat and set aside.
- Cook the chicken: In a preheated pan with a little extra avocado oil if needed, cook the marinated chicken thighs for 3-4 minutes per side, or until they reach an internal temperature of 175°F (79°C). Remove and place on a covered plate to keep warm.
- Assemble the bowls: Slice the cooked chicken thighs into strips. In serving bowls, add sliced chicken, a portion of sautéed broccolini, half a cup of cooked white rice, and several large ladles of warm broth. Garnish with chopped green onion and lightly drizzle with sesame oil. Serve immediately or store leftovers in the refrigerator for 2-3 days.
Notes
- Fresh turmeric is preferred for its flavor and color, but ground turmeric can be used as a substitute.
- For a nut-free version, substitute avocado oil for sesame oil in the broth.
- Coconut aminos provide a soy-free alternative to soy sauce, but regular soy sauce can be used if preferred.
- Ensure chicken is cooked to the safe internal temperature of 175°F to avoid undercooking.
- Leftovers keep well refrigerated for 2-3 days and reheat gently to maintain broth quality.
