This buffalo chicken flatbread combines spicy and tangy buffalo sauce with cool, creamy blue cheese and mozzarella for a crowd-pleasing appetizer or quick weeknight dinner. Ready in just 30 minutes, it’s perfect for casual gatherings or a flavorful meal with minimal effort.

  • Total Time: 30 minutes
  • Yield: 4 servings

Ingredients

Flatbread Base

  • 2 flatbreads (14.5 ounces total)
  • 2 teaspoons light olive oil

Toppings

  • 1/2 cup buffalo wing sauce (more if desired)
  • 1 1/2 cups diced cooked chicken (approximately 3/4 pound)
  • 1 cup shredded mozzarella cheese
  • 1/3 cup blue cheese dressing
  • 1/3 cup sliced green onions (about 3 green onions)

Instructions

  1. Preheat the Oven: Set your oven to 425 degrees Fahrenheit to prepare for baking the flatbreads.
  2. Prepare Flatbreads: Place the flatbreads on a parchment paper-lined sheet pan. Lightly brush the edges with the olive oil to help crisp them up during baking.
  3. Warm Flatbreads: Bake the flatbreads for about 5 minutes until they are warmed through and just beginning to crisp.
  4. Add Sauces and Toppings: Remove the flatbreads from the oven. Evenly spread the buffalo wing sauce over each flatbread. Sprinkle the diced cooked chicken and shredded mozzarella cheese on top, then drizzle the blue cheese dressing over all.
  5. Bake Until Done: Return the flatbreads to the oven and bake for 12 to 15 minutes until the edges are slightly browned and the cheese is melted. For extra browning on the cheese, place the flatbreads under the broiler on high for 1 to 2 minutes, watching carefully to avoid burning.
  6. Finish and Serve: Remove from the oven and sprinkle with sliced green onions. Add additional buffalo wing sauce and blue cheese dressing if desired for extra flavor and presentation. Slice into squares or large pieces and serve hot.
