- ¼ teaspoon salt
- Freshly ground black pepper, to taste
For Tossing
- ⅓ cup buffalo sauce
Garnish
- Diced green onion
- Diced cilantro
Instructions
- Prepare the Bleu Cheese Yogurt Dip: Make the bleu cheese yogurt dip according to your preferred recipe or package directions. Refrigerate it to chill until the meatballs are ready to be served.
- Preheat the Oven: Set your oven to 400 degrees Fahrenheit (204 degrees Celsius). Line a baking sheet with parchment paper to prevent sticking and ease clean-up.
- Mix the Meatball Ingredients: In a large bowl, combine the ground chicken, egg, panko breadcrumbs, finely diced cilantro, buffalo sauce, shredded carrot, diced green onion, minced garlic, salt, and freshly ground black pepper. Mix thoroughly until all ingredients are well incorporated.
- Form the Meatballs: Wet your hands with water to prevent sticking and shape the mixture into 20 evenly sized meatballs. Place them neatly on the parchment-lined baking sheet.
- Bake the Meatballs: Bake in the preheated oven for 12-15 minutes or until the internal temperature reaches 165 degrees Fahrenheit (74 degrees Celsius) for safe consumption.
- Toss in Buffalo Sauce: Once baked, transfer the meatballs to a large bowl. Gently toss or spoon ⅓ cup of buffalo sauce over them until they are evenly coated.
- Serve and Garnish: Serve the buffalo chicken meatballs immediately, garnished with diced green onions and cilantro. Offer the bleu cheese yogurt dip on the side for dipping, along with celery and carrot sticks if desired.
Notes
- For easier meatball forming, keep a small bowl of water nearby to dip your hands in before shaping each meatball.
- Adjust the spiciness of the meatballs by choosing mild, medium, or hot buffalo sauce according to your preference.
- To serve a larger crowd, simply double the ingredients and bake in batches if necessary.
- Ground chicken with 93% lean content ensures a juicy yet healthy result.
- Use fresh cilantro and green onion for the best flavor and garnish appearance.
