Ingredients
Peppers
- 3 large bell peppers, any color, cut in half lengthwise and seeds removed
Buffalo Chicken Filling
- 4 cups cooked shredded chicken (rotisserie chicken works well)
- 1 cup paleo mayonnaise (homemade or store-bought avocado mayo)
- 1/2 cup hot sauce or buffalo sauce (Frank’s Red Hot recommended or Whole30-compatible buffalo sauce)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon kosher salt
- 1/4 teaspoon black pepper
- 2 tablespoons nutritional yeast (optional)
- 1 bunch green onions, white and light green parts thinly sliced (plus more for garnish)
Garnishes
- Whole30 ranch dressing for garnish
- Fresh herbs for garnish
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to prepare for baking the stuffed peppers.
- Prepare Peppers: Arrange the cut and de-seeded bell peppers in a lightly greased large skillet or baking dish, placing them cut side up to hold the filling.
- Mix Filling: In a large bowl, combine the cooked shredded chicken, paleo mayonnaise, hot sauce, garlic powder, onion powder, kosher salt, black pepper, nutritional yeast (if using), and sliced green onions. Mix thoroughly to combine all flavors well. Taste and adjust hot sauce or salt if needed.
- Stuff Peppers: Fill each prepared pepper half with the buffalo chicken mixture, making sure to pack the filling in firmly for a generous portion.
- Bake Covered: Cover the baking dish with foil and bake the stuffed peppers in the preheated oven for 30 minutes. This helps the peppers soften and the flavors meld.
- Bake Uncovered: Remove the foil and bake for an additional 20 minutes. This final baking step allows the peppers to become tender and the filling to bubble and slightly brown.
- Garnish and Serve: Once baked, drizzle each stuffed pepper with Whole30 ranch dressing, sprinkle additional thinly sliced green onions and fresh herbs on top. Serve warm and enjoy!
Notes
- You can use any color bell peppers, depending on your preference and visual appeal.
- Rotisserie chicken is a time-saving option for cooked shredded chicken, but homemade cooked chicken works equally well.
- Nutritional yeast adds a cheesy flavor and is optional for those avoiding yeast or not desiring that taste.
- For a spicier dish, increase the amount of hot sauce to your taste preference.
- This recipe is perfect for meal prep and reheats well in the oven or microwave.
- Ensure to use dairy-free ranch dressing to keep the recipe Whole30 and paleo compliant.
