This Cajun Blackened Tofu Sandwich features flavorful, spicy tofu coated with a homemade blackened seasoning and baked to perfection, then served on whole-grain buns with creamy sriracha coleslaw, sliced avocado, red onion, tomato, and a touch of cashew mayo. It’s a wholesome, hearty plant-based sandwich perfect for a satisfying lunch or dinner.

  • Total Time: 60 minutes
  • Yield: 2 sandwiches

Ingredients

Tofu and Seasoning

  • 1 block extra firm tofu (14-ounce)
  • 1 batch of homemade blackened seasoning
  • Soy sauce (optional, for seasoning tofu)

Sandwich Components

  • 4 whole-grain buns or rolls
  • 1 recipe creamy sriracha coleslaw (about 1 cup or 1/4 cup per sandwich)
  • Cashew mayo, as desired
  • Sliced avocado, as desired
  • Sliced red onion, as desired
  • Sliced tomato, as desired

Instructions

  1. Preheat Oven: Preheat your oven to 425˚F (or 400˚F if using convection). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare Seasoning: Make your homemade Cajun blackened seasoning if you haven’t done so already. Set it aside for seasoning the tofu.
  3. Slice Tofu: Slice the block of tofu in half width-wise, creating two large equal pieces. Then slice each of those pieces in half length-wise so you end up with four equal tofu pieces.
  4. Season Tofu: Optionally, brush each tofu piece lightly with soy sauce to enhance flavor. Then coat all sides of the tofu pieces thoroughly with the blackened seasoning, making sure the seasoning is dry to help create a crust during baking.
  5. Bake Tofu: Place the seasoned tofu pieces on the prepared baking sheet. Bake in the preheated oven for 30 minutes, then carefully flip each piece over and bake for an additional 15 minutes. You’re aiming for darkened edges and a slight crust on the tofu.
  6. Optional Crisping: For extra texture and the signature ‘burnt’ flavor, cook the baked tofu pieces in a preheated nonstick skillet over medium heat for a few minutes on each side to crisp up. This step is optional but recommended.
  7. Prepare Sandwiches: Toast the whole-grain buns. Assemble each sandwich by placing one piece of blackened tofu on the bun, topping it with about 1/4 cup of creamy sriracha coleslaw, and adding desired toppings such as sliced avocado, red onion, tomato, and a smear of cashew mayo. For a bigger sandwich, use two tofu pieces per sandwich.

Notes

  • The optional soy sauce enhances the tofu’s flavor but can be omitted if you prefer a lower sodium option.
  • Adjust baking time according to your oven, as some may cook faster or slower.
  • The skillet step adds extra crispiness to the tofu and intensifies the blackened flavor but can be skipped if in a hurry.
  • Feel free to customize the sandwich toppings to your preference for added freshness and texture.
