Ingredients
Cheeses
- 8 ounces Mascarpone Cheese or Cream Cheese
- 1 cup (8 oz) Ricotta Cheese, drained
Sweeteners & Flavor
- 1 1/4 cups Powdered Sugar
- 2 Tablespoons Brown Sugar
- 1 teaspoon Vanilla Extract
Add-ins
- 1 to 1 1/2 cups Mini Chocolate Chips
Instructions
- Prepare the cheeses: In a mixing bowl, combine the mascarpone cheese and ricotta cheese. Be sure to drain any excess liquid from the ricotta before adding it to ensure a thick and creamy dip.
- Add sweeteners and flavor: Add the powdered sugar, brown sugar, and vanilla extract to the cheese mixture.
- Whip the mixture: Using a mixer, whip all the ingredients together for 2-3 minutes until the mixture is light, fluffy, and creamy. Taste and add more powdered sugar if you prefer a sweeter dip.
- Fold in chocolate chips: Gently fold in the mini chocolate chips to distribute evenly without deflating the whipped texture.
- Serve: Transfer the dip to a serving bowl and serve with waffle cone cookies, butter cookies, shortbread cookies, strawberries, apples, or other fresh fruit for dipping.
Notes
- Drain ricotta cheese thoroughly to avoid a watery dip.
- For a tangier taste, substitute mascarpone cheese with cream cheese.
- Adjust the amount of powdered sugar to suit your preferred sweetness level.
- Can be chilled for 1 hour before serving to enhance flavors and texture.
- Store leftovers covered in the refrigerator for up to 3 days.
