This Caprese Panini combines the fresh flavors of ripe tomato, creamy fresh mozzarella, and aromatic basil pesto, all toasted to perfection in a buttery crust. Whether prepared in a panini press or on the stovetop, this warm, savory sandwich makes a quick and delicious meal ideal for lunch or a light dinner.

  • Total Time: 20 minutes
  • Yield: 1 serving

Ingredients

Bread

  • 2 slices bread (sourdough, focaccia, or ciabatta)

Filling

  • 2-3 slices fresh mozzarella (about 2-3 ounces)
  • 2-3 slices ripe tomato
  • 2 tablespoons basil pesto
  • 1-2 teaspoons balsamic glaze

Other

  • 1 tablespoon butter, softened
  • Kosher salt, for taste
  • Ground black pepper, for taste

Instructions

  1. Butter the Bread: Generously spread softened butter on the outsides of both bread slices to ensure a golden, crispy crust once grilled.
  2. Apply Pesto: Evenly spread a layer of basil pesto on the inside surface of both bread slices for an herby, flavorful base.
  3. Assemble the Filling: On one slice, layer the fresh mozzarella and tomato slices. Lightly sprinkle kosher salt and ground black pepper over the tomatoes, then drizzle with balsamic glaze for added sweetness and tang.
  4. Close the Sandwich: Place the other slice of bread on top, pesto side down, to form the sandwich.
  5. Panini Press Method – Preheat: Preheat your panini press to get it ready for grilling.
  6. Grill the Sandwich in Panini Press: Put the sandwich inside the press and grill for 5-7 minutes until the bread is golden brown and the cheese begins to melt.
  7. Stovetop Method – Heat Pan: Heat a grill pan or skillet over medium heat as an alternative cooking method.
  8. Cook First Side: Place the sandwich on the pan and cook for 3 minutes allowing it to brown.
  9. Flip and Press: Flip the sandwich and cook for 2-3 minutes more. Place a heavy pan on top to press the sandwich down, helping it grill evenly and melt the cheese.

Notes

  • You can substitute fresh mozzarella with burrata for a creamier texture.
  • If you don’t have balsamic glaze, reduce balsamic vinegar on medium heat until syrupy.
  • Use a heavy skillet or foil-wrapped brick to press the sandwich on the stovetop.
  • This sandwich is best served immediately to enjoy melted cheese and crispy bread.
  • For a vegetarian diet, ensure the pesto does not contain any animal-based rennet.
