This Cauliflower Potato Bake with Cream is a rich, cheesy, and comforting side dish featuring tender cauliflower florets and thinly sliced russet potatoes baked in a garlicky creamy sauce. Perfect for an easy, flavorful accompaniment to any dinner, this baked casserole combines the sweetness of roasted vegetables with a luscious cheese sauce and fresh parsley garnish.

  • Total Time: 1 hour 5 minutes
  • Yield: 4 servings

Ingredients

Vegetables

  • 3 cups cauliflower florets (fresh or frozen, do not thaw if frozen)
  • 3 large russet potatoes (or any white starchy potatoes, sliced thin with skin on)

Dairy & Cheese

  • 1 1/2 cups heavy cream
  • 2 cups shredded cheese (cheddar or tasty cheese)

Seasonings

  • 3 cloves garlic, minced (or 2 tsp garlic powder)
  • Salt and pepper, to taste
  • 2 tbsp fresh chopped parsley (for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400ºF (200ºC) with a fan-forced setting. Prepare a 9 x 13 inch rectangular baking dish by lightly greasing or setting aside.
  2. Prep Cauliflower: Cut the cauliflower into small florets if using fresh. If frozen, use as is without thawing.
  3. Slice Potatoes: Using a sharp knife or mandolin, thinly slice the potatoes. There is no need to peel them; the skin adds texture and nutrients.
  4. Combine Ingredients: In a large mixing bowl, add the cauliflower florets, sliced potatoes, heavy cream, shredded cheese, minced garlic (or garlic powder), salt, and pepper. Mix thoroughly until all the vegetables are evenly coated with the creamy cheese mixture.
  5. Transfer to Baking Dish: Pour the mixture into the prepared baking dish and spread it out evenly for uniform cooking.
  6. Bake: Place the dish in the preheated oven and bake for 50-60 minutes until the bake is bubbling, the top is golden brown, and the cauliflower and potatoes are tender when pierced with a fork.
  7. Rest: Remove the bake from the oven and allow it to rest for 5 minutes to set and cool slightly.
  8. Garnish & Serve: Sprinkle freshly chopped parsley over the top as a garnish. Serve warm and enjoy this creamy, cheesy vegetable bake as a hearty side dish.

Notes

  • Use fresh cauliflower for the best texture, but frozen works if you don’t have fresh on hand. Do not thaw frozen cauliflower to avoid excess moisture.
  • Thinly slicing potatoes ensures even cooking; keep the skin on for extra nutrients and texture.
  • Cheddar cheese is recommended, but any tasty melting cheese will work well.
  • The garlic can be fresh or powder depending on your preference and pantry availability.
  • This dish can be prepared ahead of time and baked just before serving.
  • For a lighter version, you can substitute half the cream with milk, but it may affect the richness.
