Ingredients
Burger Sauce
- 1/2 cup mayo
- 2 Tablespoons grated onion
- 2 Tablespoons ketchup
- 1 Tablespoon pickle relish
- 2 teaspoons yellow mustard
- 1 teaspoon white vinegar
- 1/4 teaspoon paprika
Quesadilla Filling
- 1 pound lean ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Worcestershire sauce
- 4 burrito sized flour tortillas
- 16 thinly sliced cheddar cheese slices
- 1/2 cup onion, chopped
- 1/2 cup pickles, sliced
- 1 Tablespoon olive oil
Instructions
- Prepare Burger Sauce: In a bowl, whisk together mayo, grated onion, ketchup, pickle relish, yellow mustard, white vinegar, and paprika until smooth. Cover and refrigerate until ready to serve.
- Cook Ground Beef: Heat a large skillet over medium-high heat and add the ground beef. Brown it thoroughly, breaking it apart into small pieces. Once cooked, drain excess grease.
- Season Beef: Season the cooked beef with salt, black pepper, garlic powder, and Worcestershire sauce. Stir well until combined, then remove from heat.
- Assemble Quesadillas: Lay out each flour tortilla and on half of each, place 2 slices of cheddar cheese. Divide the seasoned beef evenly over the cheese, then add chopped onions and pickles on top, followed by 2 more slices of cheese. Fold the tortilla over to enclose the filling.
- Cook Quesadillas: Heat a griddle or large skillet over medium-high heat and add olive oil. Once hot, place the quesadillas on the skillet and cook for 2-3 minutes per side until the tortillas are golden brown and the cheese has melted inside.
- Serve: Remove quesadillas from the skillet, slice into triangles, and serve warm with the prepared burger sauce on the side.
Notes
- Use lean ground beef to reduce grease and keep the quesadilla crisp.
- Feel free to substitute cheddar with your favorite melting cheese like Monterey Jack or Colby.
- For extra flavor, add diced tomatoes or jalapeños inside.
- Make the burger sauce a day ahead to let flavors meld for enhanced taste.
- If you don’t have a griddle, a large non-stick skillet works perfectly for cooking quesadillas.
