Ingredients
Caramelized Onions
- 3 tablespoons salted butter
- 2 medium onions, thinly sliced
- 1 tablespoon brown sugar
- 1 teaspoon fresh thyme leaves, plus more for serving
Pastry and Filling
- 1 sheet frozen puff pastry, thawed
- Flour, for dusting
- 4 ounces cream cheese, room temperature
- 1 teaspoon Dijon mustard
- 6 ounces Swiss cheese, shredded
Finishing Touches
- Balsamic glaze, for drizzling
- Freshly cracked black pepper, to taste (optional)
- Flaky salt, to taste (optional)
Instructions
- Caramelize the Onions: Melt the butter in a large nonstick skillet over medium heat. Add the thinly sliced onions and cook, stirring often, until softened and translucent, about 10 minutes. Reduce heat to medium-low. Spread the onions into a single layer and cook, stirring and flattening the layer every 10 to 15 minutes, for about 45 minutes total, until golden brown and caramelized. If browning too quickly, add water by the tablespoon until caramelizing resumes. Season with salt, then stir in brown sugar and thyme.
- Prepare for Baking: Preheat the oven to 375°F (190°C). Line a sheet pan with parchment paper.
- Roll out Puff Pastry: On a lightly floured surface, unroll the thawed puff pastry sheet. Roll it into an 11 x 14-inch rectangle to ensure uniform thickness.
- Mix the Cream Cheese Spread: In a small bowl, combine the cream cheese and Dijon mustard until smooth.
- Assemble the Pinwheels: Spread a thin, even layer of the cream cheese mixture over the puff pastry, leaving a 1-inch border around the edges. Evenly distribute the caramelized onions over the cream cheese layer, then sprinkle with shredded Swiss cheese.
- Roll and Slice: Starting from one edge, roll the pastry tightly over the filling. Use a little water along the edge to seal the seam. Slice the roll into ½-inch-thick pinwheels and arrange them spaced evenly on the prepared sheet pan.
- Bake: Place the sheet pan in the preheated oven and bake for 15 to 20 minutes, or until the pinwheels are puffed up and lightly golden brown.
- Finish and Serve: Drizzle the baked pinwheels with balsamic glaze and garnish with additional fresh thyme leaves. Optionally, sprinkle with freshly cracked black pepper and flaky salt to taste. Serve warm or at room temperature.
Notes
- Thaw puff pastry according to package instructions before rolling out.
- Caramelizing onions is the key flavor driver; be patient to get them deeply golden.
- You can prep the assembled pinwheel slices and refrigerate before baking.
- Substitute Swiss cheese with Gruyère or mozzarella if desired.
- Balsamic glaze can be made by reducing balsamic vinegar with sugar until syrupy.
