Ingredients
Main Ingredients
- 1 teaspoon olive oil
- 2 cloves garlic, minced
- 1 1/2 cups low-sodium chicken broth
- 1 cup milk
- 1 (20 ounce) package cheese tortellini
- 3 cups fresh broccoli, roughly chopped
- 1 (8 ounce) package cream cheese
- 1/2 cup grated Parmesan cheese
- 2 cups cooked chicken, diced
- Salt and black pepper, to taste
Instructions
- Heat olive oil and garlic: Heat the olive oil over medium-high heat in a large pot. Add the minced garlic and cook for about 30 seconds until fragrant, being careful not to burn it.
- Add liquids and bring to boil: Pour in the low-sodium chicken broth and milk into the pot. Increase the heat and bring the mixture to a boil.
- Cook tortellini: Add the cheese tortellini to the boiling liquid and cook for 2 minutes, stirring occasionally to prevent sticking.
- Add broccoli and cook: Add the roughly chopped broccoli to the pot and continue cooking for about 3 minutes. Stir as needed until the tortellini is fully cooked and the broccoli turns bright green but remains crisp.
- Add cheeses: Reduce the heat to low, then stir in the cream cheese and grated Parmesan until both cheeses have melted completely into the sauce, creating a creamy texture.
- Add cooked chicken: Stir in the diced cooked chicken, allowing it to warm through evenly in the cheesy sauce.
- Season: Season with salt and black pepper to taste, adjusting the flavors according to preference.
- Serve: Serve the cheesy chicken broccoli tortellini hot, garnished with extra Parmesan cheese on top if desired.
Notes
- Use low-sodium chicken broth to better control the salt levels.
- Fresh broccoli is preferred for a nice crunch, but frozen broccoli can be used as a substitute.
- Cooked chicken can be from a rotisserie or leftovers to save time.
- For a dairy-free alternative, substitute cream cheese and Parmesan with vegan cheese options.
- To make this recipe spicier, add red pepper flakes when cooking the garlic.
- Be careful not to overcook the tortellini as it may become mushy.
