Ingredients
Fritter Mixture
- 1 ½ pounds boneless skinless chicken breast, diced into small cubes (can substitute with boneless skinless chicken thighs, ground chicken, or ground turkey)
- 1 large egg
- ¾ cup shredded mozzarella cheese
- ⅓ cup shredded cheddar cheese
- ⅓ cup all-purpose flour
- 1 teaspoon dried parsley, or 1 tablespoon fresh parsley, finely minced
- ½ teaspoon dried dill
- ½ teaspoon smoked paprika
- ½ teaspoon onion powder
- ½ teaspoon garlic powder
- ½ teaspoon salt, or to taste
- ½ teaspoon freshly ground black pepper, or to taste
For Cooking
- 2 tablespoons olive oil
Instructions
- Combine Ingredients: In a large bowl, add the diced chicken, egg, mozzarella cheese, cheddar cheese, all-purpose flour, dried parsley, dried dill, smoked paprika, onion powder, garlic powder, salt, and pepper. Stir everything together thoroughly until well combined.
- Heat Skillet: Heat 2 tablespoons of olive oil in a large skillet over medium heat to prepare for frying the fritters.
- Form Patties: Using spoons, scoop heaping 1-tablespoon-sized mounds of the chicken mixture into the hot skillet. Flatten each mound gently into a patty shape using the back of the spoon or another spoon to create even fritters.
- Fry First Side: Cook the fritters for approximately 3 minutes on the first side, allowing a golden crust to form. Avoid overcrowding the skillet; cook in batches if necessary.
- Flip and Fry Second Side: Flip each fritter carefully and cook for an additional 3 minutes on the other side to ensure thorough cooking.
- Check Doneness: Break open one fritter to check that the chicken is completely cooked through with no pink inside.
- Drain if Desired and Serve: Optionally, place cooked fritters on paper towels to absorb excess oil. Serve immediately with your favorite dips or sauces. For a fun twist, assemble fritters on slider buns such as Hawaiian bread for chicken sliders.
- Storage: Leftover fritters can be stored airtight in the refrigerator for up to 5 days or frozen for up to 4 months. Reheat well before serving.
Notes
- Substitute chicken breast with chicken thighs, ground chicken, or ground turkey if preferred.
- Use fresh parsley if available for a brighter flavor.
- Be sure not to overcrowd the skillet to achieve proper frying and browning.
- Serve immediately for best texture and flavor; fritters tend to be best hot and fresh.
- Slider buns like Hawaiian bread make a great pairing for cheesy chicken fritter sandwiches.
