These Chicken Patties are crispy on the outside and tender on the inside, combining shredded chicken, mozzarella cheese, fresh dill, and a zesty lemon flavor. Lightly sautéed in olive oil, these savory patties make a perfect appetizer, snack, or main dish that pairs well with fresh lemon wedges.

  • Total Time: 1 hour
  • Yield: 14 servings

Ingredients

Chicken Patty Mixture

  • 4 cups shredded chicken (from 2 large chicken breasts, approx. 16 oz by weight)
  • 2 large eggs
  • 1/3 cup mayonnaise
  • 1/3 cup all-purpose flour
  • 3 Tbsp fresh dill, finely chopped (or 1 Tbsp parsley)
  • 3/4 tsp salt, or to taste
  • 1/8 tsp black pepper
  • 1 tsp lemon zest
  • 1 1/3 cups shredded mozzarella cheese

For Coating and Cooking

  • 1 cup Panko bread crumbs
  • 2 Tbsp olive oil, divided (for sautéing)
  • Lemon wedges, for serving

Instructions

  1. Prepare the batter: In a large mixing bowl, whisk together the eggs, mayonnaise, flour, fresh dill, 1/2 tsp of salt, black pepper, and lemon zest until fully combined and smooth.
  2. Combine with chicken and cheese: Add shredded chicken and shredded mozzarella cheese to the batter. Stir thoroughly to ensure all chicken pieces are well coated with the mixture.
  3. Chill the mixture: Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This helps the batter set, making it easier to form into patties.
  4. Form patties: Using a trigger release ice cream scoop or spoon, divide the chilled mixture into 12 to 15 equal portions. Shape each into a half-inch thick round patty. Dip both sides of each patty into Panko bread crumbs to coat.
  5. Sauté the patties: Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat. Add half of the patties without overcrowding the pan. Cook for 3 to 4 minutes on each side until the patties are golden brown and cooked through. Add more olive oil if needed. Remove patties and repeat with remaining patties.
  6. Season and serve: Immediately after cooking, sprinkle the patties with a pinch of salt and squeeze fresh lemon juice over them. Serve the patties warm alongside lemon wedges for extra brightness.

Notes

  • For a more herbaceous flavor, substitute parsley for dill as preferred.
  • Ensure the patties are not too thick to cook evenly through.
  • If you prefer a crispier texture, you can bake the patties in a preheated oven at 375°F (190°C) for about 20 minutes, flipping halfway through.
  • Leftover patties can be refrigerated for up to 3 days and reheated in a skillet or oven.
  • Use chicken breasts cooked by boiling, roasting, or leftover rotisserie chicken for convenience.
