Ingredients
Pizza Dough
- 1 pound homemade or store-bought pizza dough
Filling
- 1 cup shredded rotisserie chicken
- 1/3 cup mini pepperoni
- 1 1/2 cups pizza toppings of choice, such as olives, diced peppers or chopped spinach
- 2/3 cup shredded mozzarella cheese
- 1/2 cup marinara sauce (from the 1 cup total)
Egg Wash and Topping
- 1 large egg
- 1 Tablespoon whole milk
- 1/4 cup shredded Parmesan cheese
- 1/2 teaspoon pizza seasoning or dried oregano
- 1/2 cup marinara sauce (for serving)
Instructions
- Preheat Oven and Prepare Baking Sheet: Preheat your oven to 375ºF and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Shape the Dough: Divide the pizza dough into 6 equal portions. Using a rolling pin, roll each piece into a circle, rectangle, or square with a minimum width of 6 inches to create the base for your pockets.
- Prepare the Filling: In a medium bowl, mix together shredded chicken, mini pepperoni, chosen pizza toppings, shredded mozzarella, and ½ cup marinara sauce until well combined.
- Assemble the Pizza Pockets: Place an equal portion of the filling mixture onto the center of each dough piece, leaving a ½-inch border around the edges. Whisk the egg and milk together to make an egg wash. Brush the edges of the dough nearest to the filling with the egg wash. Fold the opposite side of the dough over the filling and firmly pinch the edges together to seal the pockets.
- Final Touches Before Baking: Arrange the sealed pockets on the prepared baking sheet. Brush the tops with the remaining egg wash and sprinkle with shredded Parmesan cheese. Cut a small slit in the top of each pocket to allow steam to escape during baking.
- Bake: Bake the pizza pockets in the preheated oven for about 20 minutes or until the tops are golden brown and the dough is cooked through.
- Finish and Serve: Remove the pockets from the oven, sprinkle them with pizza seasoning or dried oregano, and serve warm with the remaining marinara sauce for dipping.
Notes
- You can customize the filling with your favorite pizza toppings like olives, bell peppers, or spinach.
- Mini pepperoni adds a nice bite-sized element, but you can substitute with regular pepperoni slices if unavailable.
- Ensure the edges of the dough are sealed tightly to prevent the filling from leaking during baking.
- Using a parchment-lined baking sheet helps prevent sticking and makes cleanup easier.
- Allow the pizza pockets to cool slightly before dipping to avoid burns from hot marinara sauce.
