Ingredients
Wraps
- 2 large tortillas, regular or low-carb/high-protein
Filling
- 7 oz cooked chicken, chopped
- 2 garlic cloves, minced
- 2 tablespoons light mayonnaise
- 1 tablespoon light Greek yogurt or plain yogurt
- 2 teaspoons hot sauce (like Frank’s)
- ¼ teaspoon salt
- 3 oz cheddar cheese, grated
- 1 green onion, chopped
Cooking
- Olive oil spray
Instructions
- Prepare the chicken mixture: In a bowl, combine the chopped cooked chicken, minced garlic, light mayonnaise, light Greek yogurt, hot sauce, and a pinch of salt. Mix thoroughly until all ingredients are evenly incorporated.
- Assemble the wraps: Lay one tortilla flat on a clean surface. Sprinkle about 2 tablespoons of grated cheddar cheese along the lower third of the tortilla. Spoon approximately ⅔ cup of the chicken mixture evenly over the cheese, then add another tablespoon of cheese on top followed by a sprinkle of chopped green onion.
- Roll the wraps: Fold in the sides of the tortilla to enclose the filling, then tightly roll the tortilla up from the bottom to form a secure wrap.
- Heat the pan: Place a non-stick pan over medium-high heat and lightly spray the surface with olive oil to prevent sticking and to assist in crisping the wrap.
- Cook the wraps: Place the wraps seam-side down in the hot pan. Cook each wrap for 3 to 4 minutes per side until the tortilla is golden brown and crispy. Cover the pan with a lid during cooking to ensure the filling warms through evenly.
- Serve: Remove the wraps from the pan, slice each in half diagonally, and serve hot for a delicious and satisfying meal.
Notes
- Use low-carb or high-protein tortillas if you want to reduce carbs or increase protein content.
- Adjust the amount of hot sauce to your spice preference.
- For extra crispiness, brush the tortillas lightly with olive oil before cooking instead of spraying.
- Feel free to swap cheddar cheese for mozzarella or your favorite melting cheese.
- Chicken can be pre-cooked rotisserie or leftover chicken to save time.
