A comforting and hearty Cheesy Ground Beef Hash Brown Casserole combining savory browned ground beef, tender shredded hash browns, creamy soup and sour cream, topped with melted sharp cheddar cheese. Perfect for a family-friendly dinner or potluck, this casserole bakes to golden, bubbly perfection with a crispy cheesy crust.

  • Total Time: 1 hour
  • Yield: 10 servings

Ingredients

Meat and Vegetables

  • 1.5 pounds lean ground beef
  • 1/2 cup yellow onion, finely chopped
  • 30 ounces frozen shredded hash brown potatoes (1 bag)

Dairy and Pantry

  • 1/4 cup butter, melted
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 10.75 ounce condensed cream of chicken soup (1 can)
  • 1 cup sour cream
  • 2 cups sharp cheddar cheese, shredded

Instructions

  1. Brown the beef and onion: In a large skillet over medium heat, cook the ground beef and chopped onion together. Break up the beef as it cooks to ensure even browning. Once fully cooked, drain any excess fat or liquid from the skillet to prevent greasiness in the casserole.
  2. Combine ingredients: In a large mixing bowl, whisk together melted butter, salt, pepper, condensed cream of chicken soup, and sour cream until smooth. Stir in the frozen shredded hash browns and the cooked beef and onions. Add 1 cup of shredded cheddar cheese and mix everything thoroughly until well combined.
  3. Prepare baking dish: Grease a 9×13 inch (or similarly sized) baking dish with butter or non-stick spray. Transfer the beef and hash brown mixture into the dish, spreading it out evenly to create a uniform layer.
  4. Top with cheese and bake: Sprinkle the remaining 1 cup of shredded cheddar cheese evenly over the top of the casserole. Bake in a preheated oven at 350˚F (175˚C) for 45 minutes, until the casserole is hot and bubbly throughout.
  5. Optional broil for crispy top: For a golden, crispy cheese crust, switch the oven to broil and cook the casserole for an additional 5-8 minutes. Watch carefully to avoid burning, and remove once the edges are browned and bubbling.

Notes

  • For a lower-fat option, use lean or extra-lean ground beef and reduced-fat sour cream.
  • Frozen hash browns do not need to be thawed before mixing.
  • Make sure to drain excess fat after browning the beef for a less greasy casserole.
  • This dish reheats well and can be stored covered in the refrigerator for up to 3 days.
  • Optional: Add diced bell peppers or mushrooms with the onions for extra veggies.
