Ingredients
Cookie Dough
- 1 Cup All Purpose Flour / Plain Flour
- ½ Cup Unsalted Butter, softened
- ¼ Cup Powdered Sugar (for the dough)
- ½ Teaspoon Vanilla Extract
- ¼ Teaspoon Salt
For Coating
- ⅔ Cup Powdered Sugar (to coat the cookies)
Filling
- 18 Candied Cherries
Instructions
- Cream Butter and Sugar: In a mixing bowl, combine the softened unsalted butter and ¼ cup powdered sugar. Mix thoroughly until the mixture is smooth and creamy.
- Add Flavor and Salt: Stir in the vanilla extract and salt to the creamed butter mixture, mixing until evenly incorporated.
- Incorporate Flour: Gradually add the all-purpose flour to the butter mixture. Use a spatula to fold and mix it all together until a cohesive, smooth dough forms.
- Divide Dough: Divide the dough evenly into 18 portions and roll each portion into a ball.
- Fill with Cherry: Flatten each dough ball slightly, place one candied cherry in the center, then carefully gather and pinch the dough edges around the cherry to seal it inside. Gently roll the sealed dough ball between your palms to maintain a round shape.
- Chill: Arrange the shaped dough balls on a lined baking tray. Refrigerate them for 1 hour to chill and firm up before baking.
- Bake: Preheat your oven to 180°C (356°F). Bake the chilled cookies for 12-15 minutes or until the bottoms turn a light golden brown.
- Coat in Powdered Sugar: While the cookies are still warm, carefully roll them in the ⅔ cup powdered sugar to coat completely. Let the cookies cool completely on a wire rack.
- Final Sugar Coating: Once cooled, roll the cookies again in powdered sugar for the classic snowy finish before serving.
Notes
- Be sure to chill the cookie dough balls before baking to prevent spreading and help maintain their shape.
- Use softened butter rather than melted to achieve the right dough consistency.
- You can substitute candied cherries with glacé cherries or maraschino cherries if preferred.
- Store the cookies in an airtight container at room temperature for up to one week.
- Rolling the warm cookies in powdered sugar allows the sugar to adhere well, creating the signature snowball effect.
