Ingredients
Puff Pastry
- 2 puff pastry sheets, thawed
Cherry Pie Filling
- 2 cups fresh cherries, pitted (or frozen cherries)
- 1/4 cup granulated sugar
- 2 tsp cornstarch
- 1 tsp lemon zest
- 1/2 tsp vanilla extract
- 1/4 tsp almond extract
For Assembly
- Coarse sugar, for sprinkling
- Egg wash (1 egg beaten with 1 Tbsp water or milk)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or prepare two smaller baking sheets.
- Prepare Cherry Filling: In a small bowl, combine the pitted cherries, granulated sugar, cornstarch, lemon zest, vanilla extract, and almond extract. Mix gently until evenly combined and set aside.
- Prepare Puff Pastry: Unfold the thawed puff pastry sheets on a lightly floured surface and cut each sheet into four equal squares, yielding eight squares total.
- Assemble Turnovers: Evenly distribute the cherry filling onto the center of each puff pastry square, about 4-5 cherries per square. Brush the edges of each square with the egg wash using a pastry brush.
- Fold and Seal: Fold each puff pastry square diagonally into a triangle, enclosing the filling. Press the edges with a fork to crimp and seal them. Cut a small slit in the center of each turnover to allow steam to escape during baking.
- Prepare for Baking: Carefully transfer the turnovers to the prepared baking sheet(s), spacing them evenly. Brush the tops with more egg wash and sprinkle with coarse sugar if desired for extra crunch and sweetness.
- Bake: Bake in the preheated oven for 18-20 minutes, or until the turnovers are puffed up and golden brown.
- Cool and Serve: Let the turnovers cool for at least 5-10 minutes before serving. Optionally, dust with powdered sugar for a decorative and sweet finish.
- Storage: Store any leftovers in an airtight container, either at room temperature or refrigerated, to maintain freshness.
Notes
- Frozen cherries can be used if fresh are not available; thaw and drain excess liquid before using.
- For a dairy-free egg wash alternative, use melted coconut oil or almond milk with a pinch of turmeric for color.
- Ensure to cut slits on turnovers before baking to prevent steam buildup and sogginess.
- Powdered sugar topping is optional but adds a nice finishing touch.
- These turnovers are best enjoyed fresh but can be reheated in the oven to restore flakiness.
