Ingredients
Protein & Vegetables
- 1 pound chicken thigh, cut into bite-sized pieces
- ½ pound green beans, cut into 1-inch pieces
- ½ medium onion, sliced
- 2 teaspoons garlic, minced
- 1 teaspoon ginger, minced or grated
Oils & Fats
- 3 tablespoons oil (divided: 1.5 tablespoons for searing chicken, rest for vegetables)
- 1 teaspoon sesame oil
Stir Fry Sauce
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 2 tablespoons Chinese cooking wine
- 2 teaspoons sugar
- 1 teaspoon hot sauce or Sriracha
Garnish
- Toasted sesame seeds
- Green onion (scallions), sliced
Instructions
- Prepare the Stir Fry Sauce: In a bowl, combine soy sauce, oyster sauce, sesame oil, Chinese cooking wine, sugar, and hot sauce or Sriracha. Mix well until sugar dissolves.
- Marinate the Chicken: Place chicken thigh pieces in a bowl, add 2 teaspoons of the stir fry sauce, and toss to coat evenly. Let the chicken marinate for 15 minutes to absorb the flavors.
- Sear the Chicken: Heat 1.5 tablespoons of oil in a wide wok or skillet over medium-high heat. Spread the marinated chicken in a single layer and cook undisturbed for 2-3 minutes until nicely seared. Flip the chicken pieces and cook another 2-3 minutes on medium-high heat. Remove the chicken from the wok and set aside; it will finish cooking later with residual heat.
- Cook the Vegetables: In the same skillet, add the remaining oil. Add sliced onion and fry for about a minute until softened. Add the green beans; if the pan seems dry, add a splash of water. Cover the skillet with a lid and cook the green beans until tender but still crisp, using the steam to speed cooking.
- Combine and Finish: When the green beans are almost done, return the cooked chicken to the skillet. Add the white part of the onion. Pour the remaining stir fry sauce evenly around the edges of the pan. Toss everything together over medium-high heat until the sauce thickens and coats the chicken and vegetables beautifully.
- Garnish and Serve: Finish the dish by sprinkling toasted sesame seeds and sliced green onions on top. Serve hot for a flavorful, quick dinner option.
Notes
- Marinating the chicken adds flavor and helps keep it tender.
- Using a lid to cover the pan while cooking green beans creates steam and speeds cooking without overcooking.
- You can adjust the heat level by increasing or omitting the hot sauce.
- Serve this stir fry over steamed rice or noodles for a complete meal.
- For a gluten-free version, use tamari instead of soy sauce and ensure oyster sauce is gluten-free.
