Ingredients
Protein and Produce
- 4 boneless skinless chicken breasts
- 1 cup chopped yellow onion
- 2 cloves garlic (minced)
- 2 tomatoes (seeded and chopped)
- 2 avocados (diced)
- 4 green onions (green parts only, minced)
Liquids and Seasonings
- 6 cups chicken broth
- ½ cup freshly squeezed lime juice (from 4 to 5 limes)
Other Ingredients
- 2 tbsp extra virgin olive oil (divided)
- 2 cups broken corn tortilla chips
Instructions
- Cook the chicken: In a large skillet, heat 1 tablespoon of the olive oil over medium-high heat. Add the chicken breasts and cook, turning once, until the chicken is no longer pink inside, about 6 to 8 minutes per side. Once cooked, transfer the chicken to a cutting board and allow it to cool.
- Sauté the vegetables: In a large pot, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion, minced garlic, and chopped tomatoes. Cover the pot and cook until the onion is softened, approximately 4 to 6 minutes.
- Add liquids and chicken: Pour in the chicken broth and freshly squeezed lime juice to the pot with the vegetables. Dice the cooled chicken breasts into bite-sized pieces and add them to the pot.
- Simmer the soup: Cover the pot and bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low and let it simmer gently for 10 minutes to allow the flavors to meld.
- Serve and garnish: Ladle the soup into individual bowls. Top each serving with an equal amount of broken corn tortilla chips, diced avocado, and minced green onions for a delicious combination of textures and flavors.
Notes
- For a spicier kick, consider adding diced jalapeño or a pinch of cayenne pepper to the soup while it simmers.
- You can substitute the chicken breasts with thighs for a richer flavor and more tender meat.
- If you prefer a thicker broth, add a small amount of cornstarch slurry during simmering to thicken.
- Use fresh lime juice for best flavor; bottled lime juice may lack brightness.
- Store leftovers in the refrigerator for up to 3 days; tortilla chips should be added fresh when serving to maintain crunch.
