Ingredients
Sauce
- 2 teaspoons cornstarch
- 4 tablespoons low sodium soy sauce (or tamari sauce)
- 1½ tablespoons oyster sauce
- 1 tablespoon granulated sugar
- 1½ teaspoons sesame oil
- Freshly ground black pepper, to taste
Main Ingredients
- 6 ounces chow mein noodles
- 2 tablespoons vegetable oil, divided
- 1 pound boneless, skinless chicken thighs, cut into 1-inch cubes (or chicken breasts)
- 3 cups shredded green cabbage
- 1½ cups matchstick carrots
- 3 garlic cloves, minced
- 4 green onions, chopped (white and light green parts only)
- 1 cup bean sprouts
- ¼ cup chicken broth
Instructions
- Make the sauce: In a small bowl, whisk together cornstarch and soy sauce until smooth. Then add oyster sauce, sugar, sesame oil, and freshly ground black pepper; whisk until well combined. Set this sauce mixture aside.
- Cook the noodles: Prepare the chow mein noodles according to package instructions, drain, and set aside, ensuring they do not stick together.
- Brown the chicken: Heat 1 tablespoon vegetable oil in a wok or large non-stick skillet over high heat. Add the cubed chicken and stir in 2 tablespoons of the prepared sauce. Cook for about 3 minutes on one side, then turn and cook another 3 minutes or until the chicken is fully cooked through. Remove chicken from pan and set aside on a plate.
- Stir-fry the vegetables: Return the wok or skillet to medium-high heat and add the remaining 1 tablespoon vegetable oil. Add the shredded cabbage and sauté for 2 minutes. Add the matchstick carrots and stir-fry for 1 minute. Stir in minced garlic and chopped green onions, cooking together for an additional 2 minutes until the vegetables are crisp-tender.
- Combine and finish: Add the cooked noodles, reserved chicken, remaining sauce, and chicken broth to the skillet. Stir constantly for about 1 minute to heat thoroughly and combine flavors. Stir in bean sprouts and cook for another 30 seconds until they soften slightly.
- Serve: Remove from heat, garnish with additional green onions if desired, and serve hot for a delicious homemade chicken chow mein.
Notes
- You can substitute chicken breasts for thighs if preferred.
- Adjust soy sauce and oyster sauce amounts based on desired saltiness.
- To prevent noodles from sticking, toss them lightly with oil after cooking.
- Add other vegetables like bell peppers or snap peas for extra crunch and nutrition.
- Use tamari sauce instead of soy sauce for a gluten-free option.
- For a spicier dish, add chili flakes or fresh sliced chili during the vegetable stir-fry step.
