Ingredients
For the Chicken Cobbler:
- 4 tablespoons salted butter, melted
- 4 cups cooked chicken, cut into bite-sized pieces (rotisserie chicken works well)
- 1 bag (12 oz) frozen peas and carrots
- 3 teaspoons garlic powder
- 3 teaspoons onion powder
- 1/2 teaspoon black pepper
- 1 can (10.5 oz) cream of chicken soup
- 2 cups chicken broth
- 1 box (11.36 oz) Cheddar Bay Biscuit Mix
- 2 cups whole milk
- 1/2 cup shredded cheddar cheese
For the Seasoned Butter Topping:
- 2 tablespoons salted butter, melted
- Seasoning packet from the Cheddar Bay Biscuit Mix box
For Serving:
- Chopped fresh parsley
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) to prepare for baking the cobbler.
- Prepare the Baking Dish: Grease a 9×13 inch baking dish with 4 tablespoons of melted butter, spreading it evenly over the bottom.
- Layer Chicken: Spread the cooked chicken pieces in a single, even layer over the melted butter in the baking dish.
- Add Vegetables: Evenly distribute the frozen peas and carrots on top of the chicken without stirring.
- Season the Vegetables: Sprinkle garlic powder, onion powder, and black pepper over the vegetables without mixing, to create seasoning layers.
- Mix Cream Sauce: In a bowl, whisk together the cream of chicken soup and chicken broth until smooth and well combined.
- Pour Sauce: Pour the soup mixture evenly over the chicken and vegetable layers, covering the surface without stirring.
- Prepare Biscuit Batter: In a separate bowl, combine the Cheddar Bay Biscuit Mix (reserving the seasoning packet), whole milk, and shredded cheddar cheese until blended into a batter.
- Add Biscuit Topping: Pour the biscuit batter evenly over the chicken and vegetable mixture without stirring, spreading gently.
- Bake: Bake the cobbler in the preheated oven for 55-65 minutes, until the biscuit topping is golden brown and cooked through. The center may be slightly runny but will thicken upon resting.
- Prepare Seasoned Butter: While baking, melt 2 tablespoons butter in a microwave-safe bowl and stir in the reserved seasoning packet from the biscuit mix.
- Brush Butter over Biscuits: As soon as the cobbler is done baking, brush the seasoned butter mixture over the biscuit topping for extra flavor.
- Rest the Cobbler: Allow the cobbler to rest for 10-15 minutes after baking to let the sauce thicken.
- Garnish and Serve: Sprinkle chopped fresh parsley on top before serving to add a fresh finish.
Notes
- You can use any cooked chicken, but rotisserie chicken simplifies preparation and adds flavor.
- Do not stir the layers once assembled; this maintains distinct textures and flavors.
- Leftover cobbler stores well in the refrigerator and reheats nicely in the oven or microwave.
- For a spicier twist, add a pinch of cayenne pepper or smoked paprika to the seasoning.
- If you prefer, substitute milk with a dairy-free alternative to adjust for dietary needs.
