This Chicken Fajita Quesadilla recipe combines tender southwestern grilled chicken with sautéed bell peppers and onions, melted Mexican blend cheese, and crispy tortillas to create a delicious and easy-to-make Tex-Mex favorite perfect for a quick dinner or snack.

  • Total Time: 25 minutes
  • Yield: 2-3 quesadillas (serves 2-3 people)

Ingredients

Vegetables

  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced

Spices and Seasonings

  • 3/4 tsp chili powder
  • 1/2 tsp garlic salt
  • Fresh cracked pepper, to taste

Protein

  • 1 9-oz bag Johnsonville Flame Grilled Southwestern Chicken Breasts

Dairy

  • Mexican Blend Cheese, amount as desired

Other

  • Tortillas (flour tortillas recommended)
  • Olive oil (for sautéing)
  • Cooking spray (for skillet)
  • 1/2 cup water

Instructions

  1. Sauté Vegetables: Heat a little olive oil in a skillet over medium heat. Add the diced onion and bell peppers. Cook, stirring frequently, until the vegetables are softened. Stir in chili powder, garlic salt, and fresh cracked pepper until well combined. Remove the sautéed vegetables from the skillet and set aside on a plate.
  2. Heat Chicken: Wipe the skillet clean, then add the Johnsonville Flame Grilled Southwestern Chicken Breasts along with the liquid from the pouch. Pour in 1/2 cup water, cover the skillet, and cook over medium heat for 6 to 8 minutes until the chicken is warmed through.
  3. Dice Chicken: Remove the chicken from the skillet and dice it into bite-sized pieces. Wipe the skillet clean again and spray it with cooking spray.
  4. Assemble Quesadilla: Place one tortilla on the skillet. Sprinkle a layer of Mexican blend cheese over the tortilla, then add a layer of diced chicken and sautéed peppers and onions. Add another sprinkle of cheese on top of the fillings, then cover with a second tortilla.
  5. Cook First Side: Cook the quesadilla over medium heat until the bottom tortilla is browned and crispy. For even cooking, place a heavy skillet or weight on top of the quesadilla to press it down.
  6. Flip and Cook Second Side: Before flipping, spray the top tortilla lightly with cooking spray. Carefully flip the quesadilla to brown the other side until golden and cheese is melted.
  7. Serve: Remove the quesadilla from the skillet and slice into triangles. Serve warm and enjoy your delicious chicken fajita quesadilla!

Notes

  • Use flour tortillas for best texture and to achieve a crispy exterior.
  • Adjust the amount of chili powder and garlic salt according to your spice preference.
  • For extra flavor, add a squeeze of lime or some fresh cilantro when assembling the quesadilla.
  • If you prefer a milder quesadilla, reduce or omit the chili powder.
  • Ensure the skillet is well heated before cooking the quesadilla to avoid sogginess.
