This comforting Chicken Noodle Casserole combines tender egg noodles, nutritious broccoli, and flavorful cooked chicken in a creamy sauce made from condensed soup and sour cream. Topped with melted cheddar cheese and scallions, it’s a hearty, easy-to-make dish perfect for family dinners that can be prepared and baked in under an hour.

  • Total Time: 50 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 3 cups uncooked egg noodles
  • 4 cups broccoli florets
  • 2 cups cooked chicken, shredded or chopped
  • 2 (10.5 ounce) cans condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/2 teaspoon garlic powder
  • 1/3 cup scallions, chopped
  • 2 cups grated cheddar cheese, divided
  • Salt and pepper to taste

Instructions

  1. Preheat oven: Preheat your oven to 375°F (190°C) and position the oven rack in the middle to ensure even baking.
  2. Cook noodles and broccoli: Bring a large pot of water to a boil. Cook the egg noodles for one minute less than the package instructions to avoid overcooking. Add the broccoli florets to the boiling water about two minutes before the noodles are done. Once cooked, drain everything and transfer directly into a 9×13 inch casserole dish.
  3. Mix filling: Add the cooked chicken, condensed cream of chicken soup, sour cream, garlic powder, chopped scallions, and half of the grated cheddar cheese to the casserole dish with the noodles and broccoli. Toss everything together gently until combined, then spread the mixture into an even layer.
  4. Add cheese topping and bake: Sprinkle the remaining cheddar cheese evenly over the top of the casserole. Cover the dish with aluminum foil and bake in the preheated oven for 25 to 30 minutes to heat through and melt the cheese.
  5. Optional broiling and serving: For a golden, bubbly cheese topping, uncover the casserole and broil for 2-3 minutes if desired. Remove from the oven, season with extra salt and pepper if needed, and serve immediately for best flavor and texture.

Notes

  • Use fresh or frozen broccoli florets; if frozen, thaw before adding to noodles.
  • Cooked chicken can be rotisserie, grilled, or leftover baked chicken.
  • Check pasta doneness to avoid mushy noodles as they will continue cooking in the oven.
  • Broiling at the end is optional but adds a nice crispy cheese layer.
  • Feel free to use a low-sodium cream of chicken soup to reduce salt content.
