Ingredients
Chicken Burgers
- 1 pound ground chicken
- ½ teaspoon kosher salt
- ½ teaspoon black pepper
- ½ teaspoon granulated garlic
- Non-stick spray
- ½ white onion, sliced thin
- 4 slices cheddar cheese
Burger Assembly
- 4 potato buns
- Mayonnaise
- Lettuce
- Dill pickles
Instructions
- Prepare the Patties: Divide the ground chicken into four equal portions and season each with kosher salt, black pepper, and granulated garlic. Form into balls without overworking the meat to keep the patty tender.
- Heat the Cooking Surface: Preheat a large griddle or a cast-iron skillet over medium heat until hot. Lightly spray with non-stick spray to prevent sticking.
- Smash the Burgers: Place the chicken balls on the griddle and use a heavy, sturdy object—such as a smaller cast iron skillet lined with foil—to press down on each ball for about 10 seconds, creating thin patties.
- Add Onions: Add the thinly sliced onions on top of each smashed patty (optional) and cook for 90 seconds to slightly caramelize them.
- Flip and Cook: Flip the burgers carefully and cook for another 2 minutes. Then place a slice of cheddar cheese on each patty. Cover the burgers loosely with a bowl containing a bit of water to create steam; this helps melt the cheese and finish cooking the patties gently.
- Assemble the Burgers: Once the cheese has melted and the burgers are cooked through, remove from the griddle and serve on toasted potato buns. Top with mayonnaise, fresh lettuce, and dill pickles for a classic burger experience.
Notes
- Use fresh ground chicken for best texture and flavor.
- Pressing the patties thin helps get crispy edges and quick cooking.
- Steaming with a bowl and a splash of water melts the cheese quickly and keeps the meat juicy.
- Feel free to add other toppings like tomato or mustard as desired.
- Make sure the griddle or pan is hot before adding patties to get a good sear.
