A flavorful and hearty Chicken Taco Rice recipe combining tender cubed chicken with vegetables, beans, and rice simmered in taco seasoning and tomato sauce, topped with melted cheddar cheese for a satisfying meal perfect for family dinners.

  • Total Time: 45 minutes
  • Yield: 4 servings

Ingredients

Protein & Vegetables

  • 1 lb boneless, skinless chicken breasts, cut into ½ inch cubes
  • ½ cup diced yellow onion
  • 1 tablespoon minced garlic
  • 3 cups diced red bell peppers
  • ½ cup corn

Liquids & Canned Goods

  • 1 tablespoon extra virgin olive oil
  • 15 oz can tomato sauce
  • 1 cup low sodium chicken broth
  • 1 15 oz can low sodium black beans, rinsed and drained

Grains & Seasonings

  • ½ cup dry white rice
  • 1 ½ tablespoons taco seasoning
  • 1 cup shredded cheddar cheese

Instructions

  1. Cook the Chicken: In a large sauté pan, heat the olive oil over medium-high heat. Add the cubed chicken breasts and cook for 5 minutes, stirring occasionally to ensure they brown evenly on all sides.
  2. Sauté Aromatics: Add the diced yellow onions and minced garlic to the pan with the chicken. Continue to sauté for another 5 minutes, stirring occasionally until the onions soften and the garlic is fragrant.
  3. Add Vegetables and Liquids: Stir in the diced red bell peppers, tomato sauce, low sodium chicken broth, black beans, corn, dry white rice, and taco seasoning. Mix all ingredients well to combine, then cover the pan and bring the mixture to a boil over medium-high heat.
  4. Simmer the Rice: Once boiling, reduce the heat to medium-low, cover, and let simmer for 20-25 minutes. Stir occasionally to prevent sticking and ensure the rice cooks evenly until tender and the liquid is absorbed.
  5. Melt the Cheese: When the rice is fully cooked, sprinkle the shredded cheddar cheese evenly over the top. Cover the pan and let it sit for one minute to allow the cheese to melt fully.
  6. Serve: Spoon the chicken taco rice into bowls. Optionally, top with your favorite hot sauce, sour cream, or salsa for extra flavor and serve immediately.

Notes

  • Make sure to rinse and drain the black beans to reduce excess sodium and improve texture.
  • You can adjust the taco seasoning amount to your preferred spice level.
  • For a creamier result, stir some sour cream into the dish before serving.
  • Use a tight-fitting lid on your pan to ensure proper simmering and rice cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated on the stovetop or microwave.
