This recipe features tender boneless, skinless chicken breasts cooked to perfection with a golden sear and finished in the oven, then topped with a rich and flavorful homemade garlic herb butter. Ready in just 25 minutes, it’s an ideal quick dinner option that pairs wonderfully with rice or a simple salad for a wholesome meal.

  • Total Time: 25 Minutes
  • Yield: 4 Servings

Ingredients

Chicken

  • 4 boneless skinless chicken breasts, pounded to even ¾-inch thickness
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • ½ teaspoon salt
  • ¼ teaspoon cracked black pepper, or ⅛ teaspoon ground black pepper

Garlic Herb Butter

  • ½ cup butter, slightly softened
  • 2 teaspoons minced garlic
  • ½ teaspoon garlic powder
  • 1 teaspoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh cilantro
  • 1 teaspoon fresh thyme, or finely chopped fresh basil

Instructions

  1. Preheat Oven: Preheat your oven to 475°F (245°C) to prepare for finishing the chicken after searing.
  2. Season Chicken: Pat the chicken breasts dry and season both sides evenly with salt and black pepper.
  3. Sear Chicken: In a large skillet over medium heat, melt the butter and drizzle in the olive oil. Add the chicken breasts and cook for 2 to 4 minutes per side until they are nicely browned but not fully cooked through.
  4. Bake Chicken: Transfer the seared chicken breasts to the preheated oven, using an oven-safe skillet or placing them in a greased baking dish. Bake for about 15 minutes, or until the internal temperature reaches 165°F (74°C), ensuring they are cooked through.
  5. Make Garlic Herb Butter: While the chicken bakes, combine the softened butter, minced garlic, garlic powder, and finely chopped fresh herbs (parsley, cilantro, thyme or basil) in a small bowl. Mix well with a fork until fully combined.
  6. Serve: When the chicken is cooked, immediately spoon a generous amount of the garlic herb butter over each piece. Let the butter melt for a minute or two, then slice and serve hot, ideally with rice or a fresh salad.

Notes

  • For dried herbs, reduce the quantity by about half since dried herbs have a more concentrated flavor.
  • Use a meat thermometer to ensure the chicken reaches a safe internal temperature of 165°F (74°C).
  • Pounding the chicken to an even thickness helps it cook evenly and quickly.
  • Serve with your favorite sides like steamed rice or a crisp green salad for a balanced meal.
