Ingredients
Chicken Marinade
- 1 lb boneless skinless chicken breasts
- 1 tbsp avocado oil
- 1 chipotle chile in adobo sauce (finely chopped)
- 1/2 lime (juiced)
- 1 tbsp honey
- 1/2 tsp garlic powder
- Kosher salt and pepper (to taste)
Cauliflower Rice & Corn
- 2 tbsp avocado oil, divided
- 1 cup grilled fresh corn or defrosted frozen corn
- 5 cups cauliflower rice
- 1 lime (juiced)
- Salt and freshly ground black pepper to taste
- 1 tsp ground cumin
Garnishes
- 1 avocado (peeled and diced)
- 1 jalapeño (sliced)
- 1/4 cup chopped parsley
- Lime wedges
- Cilantro for garnish
Instructions
- Marinate the Chicken: Place the chicken breasts in a bowl and add 1 tablespoon avocado oil, finely chopped chipotle chile, juice of half a lime, honey, garlic powder, kosher salt, and pepper. Rub the marinade all over the chicken to coat evenly, then set aside to absorb the flavors.
- Cook the Chicken: Preheat a heavy-bottom pan over medium-high heat. Add the marinated chicken and cook until the exterior is golden brown and the internal temperature reaches 165°F (74°C), about 6-8 minutes per side depending on thickness. Remove, let rest for 10 minutes, then slice or chop into bite-sized pieces.
- Prepare the Cauliflower Rice and Corn: While the chicken cooks, heat 1 tablespoon of avocado oil in a heavy-bottom skillet over medium heat. Add the corn and cook undisturbed until it begins to brown and caramelize, about 4-5 minutes. Stir in the remaining 1 tablespoon of oil and then add the cauliflower rice. Cook, stirring occasionally, for about 5 minutes or until the cauliflower rice is tender. Stir in the juice of one lime, ground cumin, salt, and freshly ground black pepper to taste.
- Assemble the Bowl: Divide the cauliflower and corn rice evenly among four bowls. Top each with sliced chipotle chicken, diced avocado, sliced jalapeño, and chopped parsley. Garnish with lime wedges and cilantro as desired before serving.
Notes
- Use fresh grilled corn for best flavor, but frozen corn is a convenient alternative.
- Adjust chipotle chile quantity to control the spice level.
- Letting the chicken rest ensures juicy slices.
- Cauliflower rice cooks quickly; avoid overcooking to retain texture.
- Add extra lime juice or cilantro for more zest and freshness.
