This homemade Chocolate Chip Granola is a delicious, crunchy blend of jumbo oats, cocoa powder, desiccated coconut, and mixed nuts, sweetened naturally with coconut sugar and maple syrup. Baked to perfection and finished with rich dark chocolate chips, it makes a perfect breakfast or snack option that’s both satisfying and easy to prepare in just 30 minutes.

  • Total Time: 30-35 minutes
  • Yield: 8 servings

Ingredients

Dry Ingredients

  • 3 cups / 240g jumbo oats (gluten-free if preferred)
  • 1/2 cup / 50g cocoa powder
  • 1/2 cup / 50g desiccated coconut
  • 1/2 cup mixed nuts, chopped
  • 2 tbsp coconut sugar or soft brown sugar
  • 1/4 tsp sea salt

Wet Ingredients

  • 1/2 cup / 120ml melted coconut oil
  • 1/2 cup / 120ml maple syrup
  • 1.5 tsp vanilla extract

Add-ins

  • 3 oz / 75g dark chocolate (chips or bar, chopped into chip-sized pieces if a bar)

Instructions

  1. Preheat Oven: Preheat your oven to 180°C (350°F) to ensure it’s at the perfect temperature for baking the granola evenly.
  2. Combine Dry Ingredients: In a large bowl, mix together the oats, cocoa powder, desiccated coconut, chopped mixed nuts, coconut sugar, and sea salt until well combined.
  3. Mix Wet Ingredients: In a separate small bowl, whisk together the melted coconut oil, maple syrup, and vanilla extract until smooth.
  4. Coat Dry Mixture: Pour the wet mixture over the dry ingredients and stir thoroughly until all the oats and nuts are evenly coated.
  5. Prepare Baking Tray: Line a large baking tray or two smaller trays with parchment paper to prevent sticking and ensure even cooking.
  6. Spread Granola: Spread the granola mixture in an even layer on the prepared baking tray(s).
  7. Bake Granola: Place the tray(s) in the preheated oven and bake for 20-25 minutes. After 10 minutes, check the granola and gently stir it to ensure even browning and prevent burning, especially at the edges.
  8. Finish Baking: Continue baking for another 10-15 minutes until the granola is crunchy and fully baked.
  9. Cool and Add Chocolate: Remove the granola from the oven and allow it to cool completely for about 30 minutes; once cooled, stir in the dark chocolate chips or chopped chocolate pieces.
  10. Serve and Store: Serve immediately or store the cooled granola in an airtight container, where it will keep fresh for 1-2 weeks.

Notes

  • Use gluten-free oats if you require a gluten-free version.
  • Stir the granola halfway through baking to prevent burning and to ensure even toasting.
  • Allow the granola to cool completely before adding chocolate to prevent melting.
  • You can customize the nuts according to your preference or use seeds for a nut-free option.
  • Store granola in an airtight container at room temperature to maintain crunchiness.
