Ingredients
Wet Ingredients
- 2 eggs
- 3 very ripe bananas
- 1/4 cup vegetable oil (avocado oil recommended)
- 1/3 cup maple syrup
- 1 tsp vanilla extract
Dry Ingredients
- 1.5 cups oat flour
- 1/2 cup rolled oats
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
Add-ins
- 1/2 cup chocolate chips, plus more for topping
Instructions
- Preheat and Prepare Pan. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper or lightly grease it with oil to prevent sticking.
- Mash Bananas. In a large bowl, mash the very ripe bananas thoroughly using a potato masher or the back of a fork until smooth with some texture remaining.
- Combine Wet Ingredients. Whisk the eggs into the mashed bananas, then add the vegetable (avocado) oil, maple syrup, and vanilla extract, mixing well to form a cohesive wet mixture.
- Mix Dry Ingredients. In a separate bowl, combine the oat flour, rolled oats, baking powder, baking soda, and salt ensuring they are evenly distributed.
- Fold Dry into Wet. Gradually fold the dry ingredients into the wet ingredients, careful not to overmix, to maintain a light batter.
- Add Chocolate Chips. Gently fold in the 1/2 cup of chocolate chips until evenly incorporated.
- Prepare for Baking. Pour the batter into the prepared loaf pan, then top with additional chocolate chips, a sprinkle of rolled oats, and a dusting of sugar to create a beautiful, glistening crust.
- Bake. Place the loaf pan in the preheated oven and bake for approximately 45 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
- Cool and Serve. Remove the bread from the oven and let it cool completely in the loaf pan before slicing. Enjoy your moist, flavorful banana bread!
Notes
- Use very ripe bananas for optimal sweetness and moisture.
- You can substitute oat flour with whole wheat flour for a different texture, but the flavor will vary.
- Maple syrup adds natural sweetness but can be swapped for honey if preferred.
- Ensure not to overmix the batter to keep the bread tender.
- Storing: Keep the bread in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
- Freezing: Slice and freeze for longer storage, thawing slices as needed.
- For a vegan version, replace eggs with flax eggs or a commercial egg replacer.
