Ingredients
Dry Ingredients
- 2-1/4 cups all-purpose flour
- 3/4 teaspoon salt
- 4 teaspoons baking powder
- 1/4 teaspoon cinnamon (optional)
- 3 tablespoons light brown sugar (lightly packed, or granulated sugar)
Wet Ingredients
- 1-1/4 cups whole milk
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
- 4 large eggs (room temperature)
- 3 tablespoons vegetable oil
- 8 tablespoons unsalted butter (melted, room temperature)
Others
- 1/2 cup mini chocolate chips
- Syrup (for serving)
Instructions
- Prepare Ingredients: Begin by bringing all wet ingredients to room temperature to ensure smooth mixing. Whisk together the whole milk and white vinegar and let it rest for 5 minutes to slightly curdle, creating buttermilk.
- Mix Dry Ingredients: In a large bowl, combine flour, salt, baking powder, cinnamon (if using), and brown sugar. Whisk them together until evenly mixed.
- Combine Wet Ingredients Except Butter: Add eggs, vegetable oil, and vanilla extract to the milk and vinegar mixture. Whisk to combine thoroughly.
- Mix Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients bowl. Mix gently with a whisk, then slowly drizzle in the melted butter while continuing to whisk until smooth. Take care not to overmix to maintain light waffles.
- Add Chocolate Chips and Rest Batter: Fold in the mini chocolate chips gently. Allow the batter to rest for 10 minutes to let the ingredients meld and the batter thicken slightly.
- Preheat Waffle Maker: Heat your nonstick waffle maker following the manufacturer’s instructions to ensure it’s fully preheated before cooking.
- Cook Waffles: Pour approximately 1/3 cup of batter into each waffle cavity. Cook until waffles are crisp on both sides and cooked fully through the center. Cooking time will vary depending on your waffle maker.
- Keep Warm or Serve: To keep waffles warm while continuing to cook the batch, place them in a warm oven. Serve immediately with syrup or your favorite toppings.
Notes
- Note 1: Use your preferred syrup or try maple syrup, chocolate syrup, or fruit compote for serving.
- Note 2: Bringing wet ingredients to room temperature results in a smoother batter and better rise.
- Note 3: Letting the batter rest allows the flour to hydrate and air bubbles to form, contributing to fluffier waffles.
- Note 4: Keeping cooked waffles warm in the oven set to low heat (around 200°F/93°C) helps maintain crispness until serving.
