Ingredients
Peanut Butter Egg Mixture
- 3/4 cup butter, melted
- 4 cups powdered sugar
- 1 1/2 cups creamy peanut butter
- 1 teaspoon vanilla extract
Chocolate Coating
- 16 ounces Ghirardelli chocolate melting wafers
- 10 ounces Ghirardelli white chocolate melting wafers
Decorations
- Sprinkles
- Colored candy melts
- Two jimmies (for bunny ears)
- Half a mini marshmallow (for bunny tail)
Instructions
- Prepare the peanut butter mixture: In a mixer, combine the melted butter, powdered sugar, creamy peanut butter, and vanilla extract thoroughly. Once mixed, refrigerate the dough for about one hour to firm up, making it easier to handle.
- Shape the eggs: Take the chilled mixture and roll it into two-inch logs. Pinch one end to resemble an egg shape and press your thumb on top to flatten slightly. Place each shaped egg on a wax paper lined baking sheet. Repeat with all the dough and then freeze the eggs for at least 30 minutes to set their shape.
- Melt the chocolates: Melt the Ghirardelli chocolate and white chocolate melting wafers separately according to package instructions, creating two dipping stations.
- Dip the peanut butter eggs: Using two forks, carefully dip each frozen peanut butter egg into the melted chocolate or white chocolate, tapping off excess coating. Place coated eggs onto parchment paper to set. Repeat until all eggs are coated.
- Decorate with colored candy melts: Melt various colors of candy melts in small bowls. Transfer melted candy to a Ziploc bag, snip off one corner for piping, and decorate the coated eggs with drizzle or patterns as desired.
- Add sprinkles (optional): For sprinkle decoration, quickly re-dip the pinked eggs into the desired melted chocolate and add sprinkles immediately before the coating sets.
- Create bunny decorations: To make a bunny, use a toothpick to dot eyes onto the egg with chocolate. Attach two jimmies as ears and half of a mini marshmallow for the tail using melted white chocolate as adhesive. Allow these decorations to set for about 10 minutes.
- Store: Store the finished chocolate peanut butter eggs in the refrigerator for optimal flavor and texture until ready to serve.
