Delicious and nutritious Chunky Monkey Quinoa Breakfast Bowl featuring fluffy quinoa cooked in water, mixed with creamy non-dairy milk, ripe banana, peanut butter, cocoa powder, and maple syrup for a rich, chocolatey flavor perfect for a healthy start to your day.

  • Total Time: 20-25 minutes
  • Yield: 4 servings

Ingredients

Quinoa Base

  • 1 cup quinoa (uncooked, rinsed and drained well)
  • 2 cups water
  • 1/4 teaspoon sea salt

Mix-Ins

  • 3/4 cup non-dairy milk
  • 1 large ripe banana (mashed)
  • 3-4 tablespoons peanut butter
  • 3 tablespoons cocoa powder
  • 2-3 tablespoons maple syrup

Instructions

  1. Cook Quinoa: In a medium pot, combine the rinsed quinoa, sea salt, and 2 cups of low-boiling water. Cover with a lid and cook over medium heat until the liquid is absorbed and the quinoa is fluffy, approximately 15-20 minutes.
  2. Add Flavorings: Remove the lid and reduce heat to low. Stir in the non-dairy milk, peanut butter, mashed banana, cocoa powder, and maple syrup. Warm the mixture gently for 1-2 minutes, stirring occasionally to meld the flavors. Taste and adjust sweetness or peanut butter amount as desired.
  3. Serve: Transfer the quinoa mixture to bowls. Add your favorite toppings such as nuts, seeds, or sliced fruit, and additional milk if you like a creamier texture. Serve immediately and enjoy your wholesome breakfast bowl.

Notes

  • Rinse quinoa thoroughly before cooking to remove its natural bitterness.
  • Use your preferred type of non-dairy milk like almond, oat, or soy for different flavor profiles.
  • Adjust the amount of maple syrup to control the sweetness.
  • For added crunch, top with chopped walnuts or almonds.
  • This recipe is naturally gluten-free and suitable for vegetarians.
