Ingredients
Crust
- 2 cans Pillsbury crescent dinner rolls (16 oz. total)
- 3 tbsp butter, melted
Cinnamon Sugar Mix
- 1 cup sugar, divided
- 1 tbsp cinnamon, divided
- pinch of salt
Cheesecake Filling
- 2 bricks cream cheese (16 oz. total), softened
- 1 egg
- 2 tsp vanilla extract
- ½ tsp cinnamon
Instructions
- Preheat the Oven: Set your oven to 350°F (175°C) to get it ready for baking the churro cheesecake.
- Make Cinnamon Sugar Mixture: In a small bowl, combine ½ cup sugar, 1 tbsp cinnamon, and a pinch of salt. Stir well and set aside for layering.
- Prepare Cheesecake Filling: In a medium bowl, beat the softened cream cheese until smooth and creamy. Add the remaining ½ cup sugar, egg, vanilla extract, and ½ teaspoon cinnamon, then beat again until fully incorporated and smooth.
- Prepare Baking Pan and First Crust Layer: Lightly grease a 9×13-inch baking pan. Sprinkle half of the cinnamon sugar mixture evenly on the bottom. Unroll one can of crescent dinner rolls carefully into one sheet and place it over the cinnamon sugar in the pan. Press the dough gently to fill all corners and seal any seams or holes.
- Add Cheesecake Layer: Spread the cream cheese mixture evenly over the crescent dough layer, smoothing the top with a spatula.
- Add Second Crust Layer: Unroll the second can of crescent rolls onto a piece of parchment paper. Pinch the seams together to make one continuous sheet roughly the same size as the filling layer. Carefully invert this dough sheet on top of the cream cheese mixture, then gently peel off the parchment paper.
- Top with Butter and Cinnamon Sugar: Brush the melted butter over the top crescent dough layer. Sprinkle the remaining cinnamon sugar mixture evenly on top for a classic churro flavor and crispy finish.
- Bake: Place the pan in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the filling looks set.
- Cool and Serve: Remove the cheesecake from the oven and allow it to cool for about 10 minutes before slicing into 12 pieces. Serve warm or at room temperature and enjoy your churro cheesecake!
