  • Total Time: 1 hour 35 minutes
  • Yield: 4 servings

Ingredients

Steak Marinade

  • 1 ¼ pounds flank steak
  • ⅓ cup olive oil
  • 1 lime, zested and juiced
  • 1 tablespoon minced garlic
  • ½ cup minced cilantro
  • 1 ½ teaspoons salt
  • ½ teaspoon pepper

Bowl Ingredients

  • 2 cups cooked white rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 avocado, sliced or cubed
  • 1 batch cilantro lime crema (see recipe)

Instructions

  1. Make the Steak Marinade: Whisk together olive oil, lime zest and juice, minced garlic, chopped cilantro, salt, and pepper until well combined to create the flavorful marinade.
  2. Marinate the Steak: Place the flank steak in a shallow dish and pour the marinade over it, ensuring the steak is fully coated. Cover and refrigerate for at least 1 hour to infuse the flavors.
  3. Cook the Steak: Heat a cast iron pan or heavy skillet over medium-high heat. Add the steak and cook for 3-4 minutes per side, or until it reaches an internal temperature of about 145°F for medium to medium-well doneness.
  4. Rest and Slice the Steak: Remove the steak from the pan and let it rest for 10 minutes to retain its juices. Then slice it against the grain into strips or cubes.
  5. Assemble the Bowls: Start with a base of cooked white rice, then top with black beans, corn, sliced avocado, and the sliced steak. Finish by drizzling or dolloping cilantro lime crema on top.
  6. Optional Add-ins: Add chopped lettuce, sautéed bell peppers, or onions for extra crunch and flavor. Enjoy your vibrant, hearty steak and rice bowl!

Notes

  • Use flank steak or skirt steak for the best texture and flavor.
  • Marinate the steak for longer if you have time—the flavor intensifies with longer marinating.
  • Letting the steak rest after cooking ensures it stays juicy and tender.
  • Cilantro lime crema can be made ahead and stored in the fridge for up to 3 days.
  • For a spicier kick, add some chopped jalapeños or a dash of hot sauce to the crema or bowls.
