Ingredients
Dry Ingredients
- 1 ½ cups all-purpose flour
- 1 ½ tsp ground cinnamon
- 1 tsp baking powder
- ¼ tsp salt
Coffee Mixture
- 2 tbsp instant coffee granules
- 1 tsp vanilla extract
Wet Ingredients
- ½ cup unsalted butter, melted
- ¾ cup brown sugar
- 1 large egg
For Rolling
- ¼ cup granulated sugar
- ¼ cup powdered sugar
Instructions
- Mix the Dry Ingredients: In a medium bowl, whisk together the flour, ground cinnamon, baking powder, and salt until evenly combined. Set aside.
- Dissolve the Coffee: In a small bowl, blend the instant coffee granules with the vanilla extract until the coffee is fully dissolved to create a fragrant base for the dough.
- Cream the Butter & Sugar: Using an electric mixer or hand whisk, beat the melted butter and brown sugar in a large bowl until smooth and creamy. Add the egg and coffee mixture, then mix until thoroughly combined.
- Combine Wet & Dry Ingredients: Gradually incorporate the dry ingredients into the wet mixture, stirring gently until just combined. The resulting dough will be soft and a bit sticky, perfect for shaping.
- Chill the Dough: Cover the dough with plastic wrap and refrigerate for 30 minutes. This step firms up the dough, making it easier to handle and enhancing the crinkle effect during baking.
- Roll & Coat the Dough: Scoop the chilled dough into small balls. First, roll each ball in granulated sugar, then roll again in powdered sugar to create a striking crinkled sugar crust.
- Bake the Cookies: Place the sugar-coated dough balls onto a parchment-lined baking sheet, ensuring ample space between each to allow for spreading. Bake in a preheated oven at 350°F (175°C) for 10 to 12 minutes until the cookies are set with a beautiful crinkled surface.
- Cool & Enjoy! Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm or at room temperature for the best flavor and texture.
Notes
- Chilling the dough helps create deeper crinkles and makes rolling easier.
- Do not overmix the dough to keep cookies soft and chewy.
- Double rolling in granulated and powdered sugar gives the cookies their signature crinkle look.
- Use fresh, high-quality instant coffee granules for the best flavor.
- Space cookies apart on the baking sheet as they will spread while baking.
- Substitute instant coffee with espresso powder or finely ground coffee if needed.
- Add a pinch of nutmeg or cardamom for a spicier variation.
- Mix in mini chocolate chips for a mocha twist.
- Use coconut oil instead of butter for a dairy-free version.
- Dough can be chilled up to 24 hours before baking and frozen for up to 3 months after rolling into balls.
