Ingredients
Blondie Batter
- 1 ½ cups all-purpose flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 cup packed light brown sugar
- ½ cup unsalted butter (melted)
- 1 large egg + 1 egg yolk (room temperature)
- 2 teaspoons vanilla extract
Cinnamon Topping
- ¼ cup granulated sugar
- 1 tablespoon cinnamon
Cream Cheese Glaze
- 1 oz cream cheese (softened)
- 3 tablespoons butter (softened)
- ¾ cup powdered sugar
- 1 tablespoon milk
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper, leaving an overhang on the sides for easy removal of the blondies.
- Make Blondie Batter: In a large bowl, whisk together the melted butter and brown sugar until smooth. Add the egg, egg yolk, and vanilla extract; whisk until the mixture is thick and glossy, ensuring full incorporation.
- Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, salt, and cinnamon until evenly mixed.
- Fold Dry into Wet: Gently fold the dry ingredients into the wet mixture using a spatula until no streaks of flour remain. Be careful not to overmix to keep the blondies tender.
- Spread Batter: Spread the blondie batter evenly into the prepared baking pan, smoothing the top with the spatula.
- Add Cinnamon Topping: In a small bowl, stir together granulated sugar and cinnamon. Sprinkle spoonfuls of this mixture over the surface of the batter, covering it fully for a sweet cinnamon swirl.
- Bake: Bake in the preheated oven for 30–36 minutes, until the edges are golden brown and the center is just slightly soft. The blondies will continue to set as they cool.
- Cool: Allow the blondies to cool completely in the pan before adding the glaze to prevent melting.
- Prepare Glaze: In a small bowl, whisk together softened cream cheese, softened butter, powdered sugar, and milk until smooth and creamy. Add a little more milk if the glaze is too thick for drizzling.
- Glaze and Serve: Drizzle the cream cheese glaze over the cooled blondies. Use the parchment overhang to lift the blondies out of the pan and slice into squares. Enjoy!
Notes
- Ensure eggs are at room temperature to help the batter mix evenly.
- Do not overmix the batter to keep the blondies soft and tender.
- Use parchment paper with an overhang for easy removal of the blondies from the pan.
- The cinnamon topping can be adjusted to taste for more or less sweetness and spice.
- Let blondies cool fully before glazing to avoid glaze melting and running off.
- Store blondies airtight at room temperature for up to 3 days or refrigerate for up to a week.
