Deliciously soft and flavorful French Toast Muffins inspired by classic French toast and bread and butter pudding. These muffins are infused with cinnamon and vanilla, soaked in a sweetened egg mixture, and baked to golden perfection. Perfect for a cozy breakfast or brunch treat.

  • Total Time: 30 minutes
  • Yield: 12 muffins

Ingredients

Dry Ingredients

  • 2 Tablespoons granulated sugar
  • 1 Teaspoon ground cinnamon

Bread

  • 12 Slices brioche bread, or sourdough bread

Wet Ingredients

  • 4 eggs
  • 2 Tablespoons light brown sugar, packed
  • 2 Teaspoons vanilla extract
  • 1 Cup milk

Instructions

  1. Preheat and Prepare: Preheat the oven to 350°F (175°C) and grease a muffin tin thoroughly to prevent sticking.
  2. Mix Cinnamon Sugar: In a small bowl, combine the granulated sugar and ground cinnamon, setting aside half for later use.
  3. Cube the Bread: Slice the brioche or sourdough bread into cubes, suitable for muffin-sized portions.
  4. Make Egg Mixture: In a large bowl, whisk the eggs, then incorporate the light brown sugar, vanilla extract, and milk until well combined.
  5. Soak the Bread Cubes: Add the cubed bread into the egg mixture, gently stirring to ensure each piece is thoroughly coated and soaked.
  6. Incorporate Cinnamon Sugar: Sprinkle half of the cinnamon sugar mixture over the soaked bread and carefully mix to distribute the flavor. Then sprinkle the remaining cinnamon sugar and mix again gently.
  7. Fill Muffin Tins: Evenly distribute the soaked and seasoned bread mixture into the greased muffin tin cavities without pressing down, allowing the muffins to remain light and fluffy.
  8. Bake: Place the muffin tin in the preheated oven and bake for 20 to 22 minutes until the muffins turn golden on top and are set in the center.
  9. Serve Warm: Remove from the oven and serve the French Toast Muffins warm for the best taste and texture.

Notes

  • For best results, use brioche bread for extra richness, but sourdough works well too.
  • Do not press the bread mixture down in the muffin tin to keep the muffins light and fluffy.
  • These muffins can be stored in the refrigerator and reheated gently in the oven or microwave.
  • Add a drizzle of maple syrup or a dusting of powdered sugar before serving for extra sweetness.
  • Use whole milk for creamier muffins, or substitute with a dairy-free milk to make them lactose-free.
