This classic meatloaf recipe combines lean ground beef with savory seasonings and a sweet, tangy ketchup glaze for a hearty and comforting meal. Perfectly baked to juicy perfection, it is an easy-to-make dinner that serves eight and pairs wonderfully with mashed potatoes or steamed vegetables.

  • Total Time: 1 hour 35 minutes
  • Yield: 8 servings

Ingredients

Main Ingredients

  • 2 pounds lean Ground beef
  • 1 small White onion, finely minced
  • 2 Eggs
  • 1 cup Bread crumbs
  • 1/4 teaspoon Pepper
  • 1/2 teaspoon Seasoning salt
  • 1 teaspoon Garlic powder
  • 1/2 cup Ketchup

Glaze

  • 1/4 cup Ketchup
  • 1/4 cup Brown sugar
  • 2 teaspoons Mustard

Instructions

  1. Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Lightly grease a 9×5 inch loaf pan with nonstick cooking spray to prevent sticking and set aside.
  2. Combine Ingredients: In a large mixing bowl, add the ground beef, finely minced onion, eggs, bread crumbs, pepper, seasoning salt, garlic powder, and 1/2 cup of ketchup. Using your hands, gently mix all ingredients until just combined, being careful not to overwork the meat.
  3. Shape and Place Meatloaf: Transfer the meat mixture into the prepared loaf pan, pressing it down evenly to form a loaf shape.
  4. Prepare Glaze: In a small bowl, mix together the remaining 1/4 cup ketchup, brown sugar, and mustard until smooth.
  5. Apply Glaze: Spread the glaze evenly over the top of the meatloaf for a flavorful, sticky topping.
  6. Bake: Place the loaf pan in the preheated oven and bake for 1 hour to 1 hour and 15-30 minutes, or until the meatloaf is cooked through and reaches an internal temperature of 160°F (71°C).
  7. Rest and Serve: Remove the meatloaf from the oven and let it cool and settle for several minutes. Once rested, slice and serve warm with your favorite sides.

Notes

  • Use lean ground beef to reduce excess fat and keep the meatloaf moist.
  • Do not overmix the meat mixture as it can make the meatloaf dense and tough.
  • The glaze adds a sweet and tangy flavor that balances the savory meat.
  • Checking the internal temperature with a meat thermometer ensures perfectly cooked meatloaf.
  • Leftovers can be refrigerated for up to 3 days or frozen for up to 3 months.
