Ingredients
Crust
- 1 cup Biscoff or speculoos cookie crumbs
- 3 tbsp melted butter
Cheesecake Filling
- 8 oz cream cheese, softened
- ¾ cup powdered sugar
- ½ cup cookie butter (plus extra for drizzling)
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
Garnish
- Extra cookies for garnish (optional)
Instructions
- Prepare the crust: In a small bowl, combine the Biscoff or speculoos cookie crumbs with melted butter until evenly mixed. Spoon this mixture evenly into the bottom of each serving cup to create a firm base layer.
- Whip the cream: In a separate bowl, whip the heavy whipping cream using an electric mixer until soft peaks form. This means when you lift the beaters, the cream should hold a soft peak that slightly droops.
- Make cheesecake mixture: In a large bowl, beat together the softened cream cheese, powdered sugar, cookie butter, and vanilla extract until the mixture is smooth and creamy without lumps.
- Fold whipped cream into cheesecake base: Gently fold the whipped cream into the cream cheese mixture, using a spatula to combine without deflating the air, creating a light and airy mousse-like texture.
- Assemble layers: Spoon a layer of the cheesecake filling over the cookie crumb crust in each cup. Drizzle a little melted cookie butter over the filling for extra flavor.
- Repeat layering: Add another layer of cookie crumbs if desired and top with the remaining cheesecake filling, finishing with a smooth layer on top.
- Garnish: Decorate each cheesecake cup with extra cookie crumbs or whole cookies as a garnish for added texture and visual appeal.
- Chill: Place the assembled cups in the refrigerator and chill for at least 1 hour to allow the cheesecake cups to set and flavors to meld before serving.
Notes
- For the best texture, make sure the cream cheese is softened to room temperature before mixing.
- Use a light folding technique to maintain the whipped cream’s fluffiness in the cheesecake filling.
- These cups can be prepared a day ahead and stored covered in the refrigerator.
- Optional garnish can be adapted to personal preference, such as crushed nuts or a drizzle of caramel.
- To intensify cookie butter flavor, warm cookie butter slightly before drizzling.
