Ingredients
Vegetables
- 1/2 cup onion, diced
- 1 cup potatoes, diced
- 2 tbsp fresh chives, chopped
Wet Ingredients
- 3 large eggs
- 1/2 cup heavy cream
- 1/2 cup plain Greek yogurt
- 2 tbsp olive oil
Dairy
- 1 cup cheddar cheese, shredded
Seasonings
- 1 tsp salt, divided
- Black pepper, to taste
- 1/2 tsp paprika
Instructions
- Sauté Onion and Potatoes: Heat olive oil in a skillet over medium heat. Add diced onion and potatoes, seasoning with half the salt, black pepper, and paprika. Cook for about 5 to 8 minutes, stirring occasionally, until the potatoes are fork-tender and the onions are softened. Remove from heat and let cool to room temperature. (You may prepare this step a day ahead.)
- Preheat Oven: Set your oven to 350°F (175°C) to preheat while you prepare the batter.
- Mix Wet Ingredients: In a large mixing bowl, whisk together the eggs, heavy cream, and plain Greek yogurt until smooth and well combined.
- Combine Ingredients: Add the shredded cheddar cheese, chopped chives, and cooled sautéed onion and potato mixture into the egg mixture. Stir everything together thoroughly and season again with remaining salt and additional black pepper, if desired.
- Prepare Baking Dish: Grease a brownie pan or a muffin tin lightly with oil or butter. Spoon the mixture evenly into the pan or muffin cups.
- Bake: Place the pan in the preheated oven and bake for 20 to 25 minutes, or until the tops are golden brown and the bake is set in the center.
- Serve: Remove from oven and let cool slightly before serving. Enjoy warm as a delicious breakfast, brunch, or light meal.
Notes
- You can prepare the sautéed potatoes and onions a day in advance to save time.
- If desired, substitute Greek yogurt with sour cream for a slightly different tangy flavor.
- This bake is great to make in muffin tins for individual servings and easy portion control.
- Use sharp cheddar for a bolder cheese flavor or mild cheddar for a subtler taste.
- Adjust seasoning to your preference, especially salt and paprika.
- This dish can be refrigerated for up to 3 days and reheated gently before serving.
