Ingredients
Chicken and Seasoning
- 2 large chicken breasts
- 1 teaspoon seasoned salt such as Lawry’s
- 1/2 teaspoon ground black pepper
Sauté Ingredients
- 1 tablespoon butter plus extra if needed
- 1 medium onion, cut into 1/4-inch slices
- Salt, to taste
- 1/2 pound button mushrooms, sliced
Topping
- 1/4 pound Monterey Jack cheese, shredded
Instructions
- Prepare the chicken: Cut the chicken breasts in half horizontally. Place each piece between sheets of plastic wrap and gently pound with a meat mallet until they are uniformly thin. Season both sides with seasoned salt and ground black pepper.
- Sauté onions and mushrooms: Heat 1 tablespoon of butter in a large skillet over medium-low heat. Add onion slices and a pinch of salt, sauté for 3 to 4 minutes, stirring occasionally. Add sliced mushrooms and continue sautéing for another 3 to 4 minutes until mushrooms start to brown. Remove onion and mushroom mixture from the skillet and set aside.
- Cook the chicken: If the skillet is dry, add an additional teaspoon of butter. Place chicken breasts in the hot skillet without overcrowding (cook in batches if necessary). Cook for 6 to 8 minutes on one side until golden brown. Flip and cook for another 3 to 4 minutes on the other side until cooked through.
- Smother the chicken: Top each chicken breast with the sautéed onions, mushrooms, and shredded Monterey Jack cheese. Turn off the stove and cover the skillet to allow the cheese to melt from the residual heat, about 2 minutes.
- Serve: Once the cheese has melted, serve the smothered chicken hot and enjoy your restaurant-quality meal at home.
Notes
- For best results, use a meat mallet or rolling pin to ensure even thickness for quicker and uniform cooking.
- Do not overcrowd the pan when cooking the chicken; this helps achieve a nice sear.
- You can substitute Monterey Jack cheese with mozzarella or cheddar for a different flavor.
- Feel free to add fresh herbs like thyme or parsley to the mushroom and onion mixture for added aroma.
- This dish pairs well with mashed potatoes, steamed vegetables, or a fresh garden salad.
