Ingredients
Vegetables
- 4 ears corn on the cob
Marinade & Seasonings
- ½ cup olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons smoked paprika
- 2 teaspoons garlic powder
- 1 teaspoon onion powder
- 2 teaspoons ground cumin
- 2 teaspoons brown sugar
Finishing Touches
- 2½ tablespoons butter (melted)
- lime (for serving)
- chopped fresh cilantro (for serving)
Instructions
- Prep the corn: Remove the husks and silks from the corn ears and microwave them for 2 minutes to soften slightly. Once cool enough to handle, cut each cob in half lengthwise, then cut each half lengthwise again, and finally cut each piece crosswise to create approximately 3-4 inch long “ribs.”
- Marinade the corn: Place the corn ribs in a large mixing bowl and drizzle with olive oil. Add salt, black pepper, smoked paprika, garlic powder, onion powder, ground cumin, and brown sugar. Toss all ingredients together to evenly coat the corn ribs. Allow the corn to marinate for about 15 minutes to absorb the flavors.
- Preheat the oven: Set your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking.
- Roast the corn ribs: Arrange the marinated corn ribs in a single layer on the prepared baking sheet. Use a second baking sheet if needed to avoid overlapping. Roast in the oven for 20 minutes until golden brown. At the halfway mark (after 10 minutes), brush the corn ribs with the melted butter and turn them over to ensure even cooking.
- Serve: Remove the corn ribs from the oven and immediately squeeze fresh lime juice over them. Garnish with chopped fresh cilantro and serve warm as a tasty appetizer or side dish.
Notes
- Microwaving the corn before cutting makes the ribs easier to handle and helps soften them slightly for roasting.
- If you prefer a spicier version, add a pinch of cayenne pepper or chili powder to the seasoning mix.
- Use fresh lime juice and cilantro to add brightness and freshness to balance the smoky spices.
- For a dairy-free option, substitute melted butter with additional olive oil or a vegan butter alternative.
- These corn ribs can also be grilled instead of roasted to add smoky charred flavors.
