Ingredients
Vegetables
- 4 Large carrots, chopped into large pieces
- 6 Medium russet potatoes, quartered
- 1 Yellow onion, peeled and quartered
- 2 teaspoons minced garlic
- 1/2 head of cabbage, coarsely chopped (optional)
Meat and Broth
- 1 (4 pound) corned beef brisket
- 3 cups beef broth
Seasonings
- 1 Tablespoon salt
- 2 teaspoons fresh pepper
- Spices packet that comes with the corned beef brisket
Instructions
- Prepare Vegetables: Place the chopped carrots, quartered potatoes, and quartered onion at the bottom of your crock pot to create a vegetable bed.
- Add Garlic: Sprinkle the minced garlic evenly over the vegetables for added flavor.
- Add Broth: Pour the 3 cups of beef broth over the vegetables to keep them moist during cooking.
- Prepare Brisket: Rinse the corned beef brisket to remove excess blood, and trim off any excess fat if desired.
- Layer Brisket: Place the cleaned brisket on top of the vegetables in the crock pot.
- Season: Sprinkle the seasoning packet that comes with the brisket along with the salt and fresh pepper onto the meat.
- Cook Brisket: Cover and cook on low heat for 8 hours. Adjust time if your crock pot runs hot. The internal temperature of the corned beef should reach about 160°F before adding the cabbage.
- Add Cabbage: One hour before serving, add the chopped cabbage to the crock pot to soften without overpowering flavors, or cook separately to keep flavors distinct.
- Finish Cooking: Continue cooking until the corned beef reaches an internal temperature of 190-205°F, indicating it is fully cooked and tender.
- Rest and Serve: Remove the brisket from the crock pot and let it rest for 5 minutes before slicing. Serve with the cooked vegetables and cabbage.
Notes
- Trim excess fat from the brisket if you prefer a leaner dish.
- Cabbage can be cooked separately if you want to prevent its flavor from mingling with other vegetables.
- Monitor the internal temperature of the brisket with a meat thermometer for best results.
- If your crock pot cooks hotter than average, reduce the cook time to avoid overcooking.
- This dish tastes even better the next day, allowing the flavors to meld further.
