Ingredients
Pasta
- 8 oz pasta
Sauce
- 1 cup cottage cheese, full fat / whole milk
- 3/4 cup whole milk
- 1/2 cup shredded Parmesan cheese
- 1 tsp cornstarch
- 1 tsp garlic powder
- 1/2 tsp dried basil
- 1/2 tsp dried oregano
- Salt, to taste
- Black pepper, to taste
Optional Garnishes
- Extra fresh Parmesan cheese
- Fresh parsley
- Cracked black pepper
Instructions
- Cook the pasta: Boil the pasta according to the package instructions until al dente. Drain and set aside.
- Prepare the sauce: In a blender, combine cottage cheese, whole milk, shredded Parmesan, cornstarch, garlic powder, dried oregano, and dried basil. Blend the mixture until it becomes smooth and creamy.
- Heat the sauce: Pour the blended sauce into a large pan over low heat. Warm the sauce slowly for about 5 minutes, stirring occasionally, until it’s heated through and slightly thickened.
- Combine pasta and sauce: Add the cooked pasta to the pan with the Alfredo sauce. Toss everything together gently to ensure the pasta is evenly coated with the sauce. Season with salt and freshly ground black pepper to your preference.
- Serve: Plate the pasta and, if desired, top with extra fresh Parmesan cheese, chopped fresh parsley, and additional cracked black pepper before serving. Enjoy your creamy and wholesome Cottage Cheese Alfredo!
Notes
- Use full-fat or whole milk cottage cheese to get a creamy, rich texture in the sauce.
- Be sure to blend the sauce ingredients thoroughly to avoid any lumps from the cottage cheese.
- Adjust the seasoning with salt and pepper according to taste after mixing the pasta and sauce.
- For a lighter version, substitute whole milk with low-fat milk, but the sauce may be less creamy.
- If the sauce is too thick after warming, add a splash more milk to achieve desired consistency.
