These cottage cheese egg bites are a protein-packed, convenient breakfast option perfect for busy mornings. Quick to prepare with just 15 minutes of prep and 20 minutes baking, they are easy to customize with your favorite veggies or meats for a nutritious start to your day.

  • Total Time: 35 minutes
  • Yield: 12 egg bites

Ingredients

Egg Mixture

  • 8 eggs
  • 1 cup cottage cheese (any fat content between 0% – 2%)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder

Toppings

  • ½ cup shredded cheese
  • 1 cup mix-ins of choice (such as chopped spinach, diced peppers, broccoli florets, cooked sausage, ham, etc.)

Instructions

  1. Preheat and prepare muffin tray: Preheat your oven to 350°F (175°C) and lightly grease a silicone muffin tray using non-stick cooking spray or a small amount of oil. This ensures the egg bites will easily slide out once baked.
  2. Blend egg mixture: In a high-powered blender, combine the eggs, cottage cheese, salt, black pepper, garlic powder, and onion powder. Blend until the mixture is smooth and well combined.
  3. Fill muffin cups: Pour about ¼ cup of the egg mixture into each cavity of the prepared muffin tray, evenly dividing the batter among the 12 cups.
  4. Add toppings: Sprinkle shredded cheese and your choice of mix-ins over each filled cup. Use the back of a spoon to gently incorporate the toppings into the egg mixture. Optionally, add a little extra cheese on top of each cup for a richer flavor.
  5. Bake: Place the muffin tray in the preheated oven and bake for 18-22 minutes or until the egg bites are set and no longer jiggly when gently shaken.
  6. Cool and serve: Allow the egg bites to cool slightly in the tray before removing. Serve warm, or store for meal prep purposes.

Notes

  • To substitute whole eggs with egg whites, use about 1.5 cups of egg whites (approximately 12 egg whites); note that this version may be less fluffy and slightly more moist.
  • Store cooked egg bites in an airtight container in the refrigerator to maintain freshness.
  • While freezing is possible, the texture might become watery upon thawing; for best results, defrost overnight in the refrigerator.
  • Nutrition information is an estimate and recipes should be chosen based on overall nourishment and enjoyment, not just calorie counting.
