Cowboy Casserole is a hearty and comforting dish featuring lean ground beef, tender potatoes, mushrooms, and black beans all cooked together in a flavorful red sauce with coconut milk and spices. This one-dish meal is perfect for a cozy dinner and is easy to prepare with simple ingredients, baking to perfection in the oven until bubbly and golden brown.

  • Total Time: 1 hour 35 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1.5 pounds lean ground beef
  • 1 medium sweet onion, diced
  • 1 pound button mushrooms, cleaned and halved
  • 4 garlic cloves, minced
  • 1 teaspoon cayenne powder, or to taste
  • 1 teaspoon ground coriander
  • Kosher salt, or to taste
  • 15 ounces black beans, one can, drained and rinsed
  • 13.6 ounces full-fat coconut milk, 1/2 can
  • 14.5 ounces marinara sauce, one can
  • 1.5 pounds potatoes, diced into small 1/2-inch cubes
  • 1 1/2 teaspoons garlic salt
  • 1/2 teaspoon ground pepper

Optional Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat and Cook Ground Beef: Preheat your oven to 350°F (175°C). Heat a large pan over medium heat and cook the 1.5 pounds of lean ground beef, breaking it apart with a wooden spoon until it is no longer pink.
  2. Sauté Vegetables and Season: Add the diced sweet onion, halved button mushrooms, minced garlic cloves, cayenne powder, ground coriander, and kosher salt to the cooked beef. Stir occasionally and cook for 5 to 7 minutes, until the vegetables soften and develop flavor.
  3. Add Beans, Coconut Milk, and Marinara: Stir in the drained black beans, half a can of full-fat coconut milk, and the marinara sauce. Mix well and let the mixture start bubbling slightly to combine all flavors.
  4. Prepare Potatoes and Combine: In a separate bowl, season the diced potatoes with garlic salt and ground pepper, mixing thoroughly. Carefully transfer the beef mixture into a deep lasagna casserole dish. Evenly spread the seasoned potatoes over the top, gently pressing them into the sauce to nestle.
  5. Bake Covered: Cover the casserole dish with aluminum foil and bake in the preheated oven for 50 minutes, or until the potatoes are tender when pierced with a fork.
  6. Bake Uncovered for Browning: Remove the foil and continue baking for another 20 minutes, allowing the top to brown nicely and the sauce to thicken.
  7. Garnish and Serve: Remove from oven, garnish with chopped fresh parsley if desired, and serve warm for a comforting and flavorful meal.

Notes

  • Dicing the potatoes into small 1/2-inch cubes ensures even and quicker cooking while baking.
  • Adjust cayenne powder to your spice preference for milder or hotter flavor.
  • Full-fat coconut milk adds creaminess; light coconut milk can be used but will result in a lighter texture.
  • This casserole can be reheated well and makes great leftovers.
  • If preferred, substitute black beans with kidney beans or pinto beans for different flavors.
