Cowboy Casserole is a hearty and comforting baked dish featuring spicy seasoned ground beef, black beans, corn, creamy cheese sauce, and crispy tater tots. Perfect for a family dinner, this casserole combines protein, vegetables, and a crunchy topping for a satisfying meal.

  • Total Time: 50 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 1 pound lean ground beef
  • 1 ounce taco seasoning (1 package or 2 tablespoons homemade)
  • 15 ounces canned black beans, drained and rinsed
  • 1 cup frozen corn kernels, thawed
  • 10.5 ounces condensed cream of chicken soup
  • 8 ounces shredded cheddar cheese, divided (about 2 cups)
  • ½ cup milk
  • ¼ cup sour cream
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 16 ounces Tater Tots (about 4 cups)

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the casserole.
  2. Cook Beef: Heat a large skillet over medium-high heat. Add the ground beef and cook until no pink remains, breaking it up as it cooks. Drain excess fat to reduce grease. Stir in the taco seasoning and cook for 2 more minutes to infuse the beef with flavor.
  3. Mix Ingredients: To the cooked beef in the skillet, add the drained black beans, thawed corn, condensed cream of chicken soup, half of the shredded cheddar cheese, milk, sour cream, onion powder, and black pepper. Stir well to combine all ingredients evenly.
  4. Prepare Casserole Dish: Grease a 9×13-inch casserole dish. Spread half of the tater tots evenly on the bottom to form the first layer.
  5. Assemble Casserole: Spoon the beef and bean mixture over the layer of tater tots, spreading it out evenly. Then top with the remaining tater tots. Sprinkle the rest of the cheddar cheese on top for a cheesy crust.
  6. Bake: Place the casserole dish uncovered in the preheated oven. Bake for 20-25 minutes or until the tater tots are browned and the casserole is bubbly and hot throughout.

Notes

  • For a spicier kick, add extra chili powder or cayenne pepper to the beef mixture.
  • Use a gluten-free taco seasoning blend for a gluten-free version.
  • Swap cream of chicken soup with a dairy-free alternative to make it lactose-free.
  • For extra crunch, broil the casserole for the last 2-3 minutes, watching carefully to avoid burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
