Cowboy Queso is a hearty, cheesy dip featuring ground pork sausage, Velveeta, and a blend of cheeses mixed with flavorful ingredients like Rotel tomatoes, black beans, corn, and fresh lime juice. Perfect for parties, this warm dip is served with tortilla or corn chips and can be kept warm in a slow cooker for convenient snacking.

  • Total Time: 30 minutes
  • Yield: 24 servings

Ingredients

Meats and Cheeses

  • 1 pound ground pork sausage
  • 32 ounces Velveeta cheese, cubed
  • 1 bag (8 oz) shredded taco cheese blend
  • 1 bar (8 oz) cream cheese, cubed

Vegetables and Beans

  • 2 cans (10 oz each) Rotel (diced tomatoes and green chilies)
  • 1 can (15 oz) corn, drained
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup finely chopped red onion

Other Ingredients

  • 1 lime, juiced
  • 2 tablespoons chopped fresh cilantro
  • Tortilla chips or corn chips for serving

Instructions

  1. Cook the Sausage: Heat a large skillet pan over medium-high heat and cook the ground pork sausage until no longer pink, breaking it apart as it cooks. Once cooked through, drain any excess grease from the pan to avoid a greasy dip.
  2. Melt the Cheeses: Reduce the heat to medium-low. Add the cubed Velveeta, shredded taco cheese blend, and cream cheese to the skillet with the cooked sausage. Stir continuously until all cheeses are melted and the mixture becomes smooth and creamy.
  3. Combine Ingredients: Stir in the drained corn, both cans of Rotel, rinsed black beans, chopped red onion, and fresh lime juice. Continue cooking and stirring the mixture for about 5 minutes until all ingredients are well combined and heated through.
  4. Garnish and Serve: Sprinkle the top with chopped fresh cilantro. Serve the cowboy queso warm directly from the skillet or transfer it to a serving dish. Accompany with tortilla chips or corn chips for dipping. For keeping warm during parties, transfer the dip to a slow cooker set on the WARM setting. Optional garnishes include chopped tomatoes, green onions, or sliced jalapeños for added flavor and color.

Notes

  • Drain excess grease from cooked sausage to prevent a greasy dip.
  • Use Velveeta cheese for smooth melting; substitute with other melting cheeses if desired but texture may vary.
  • Can be kept warm in a slow cooker on WARM setting for parties.
  • Optional garnishes such as chopped tomatoes, green onion, or sliced jalapeños enhance flavor and presentation.
  • Serve with sturdy chips like Fritos scoops or thick tortilla chips that can hold the dip well.
