- 1 tsp Paprika
- 1 tsp Oregano
- 1 tsp Ground black pepper
- 1 tsp Dried Italian herbs

Instructions
- Pre-cook Wild Rice: Prepare the wild rice according to the package instructions, then set it aside for later use.
- Prepare Vegetables: Peel and chop the autumn squash, chop the carrot, dice the onion, and chop the celery carefully to have all vegetables ready for cooking.
- Sauté Vegetables: Heat 2 tablespoons of olive oil in a deep saucepan over medium-high heat. Add the onion, carrots, and celery, and sauté for about 5 minutes until the onion becomes slightly soft.
- Add Chicken: Add the bite-sized boneless chicken pieces into the pot. Continue to sauté for 5 minutes until the chicken changes from raw to an opaque white color.
- Add Squash and Broth: Stir in the chopped squash cubes and pour in the 2 cups of chicken broth. Add seasoning including paprika, oregano, ground black pepper, and dried Italian herbs. Cook for 10 to 15 minutes until the squash is tender.
- Adjust Seasoning and Simmer with Rice: Taste the soup and adjust seasonings as needed. Add the pre-cooked wild rice and let the soup simmer on low heat for 5 more minutes so the rice absorbs the flavors.
- Serve: Remove the pot from heat. Serve the cozy autumn wild rice soup warm and enjoy the comforting flavors.
Notes
- Pre-cooking the wild rice ensures it cooks evenly and maintains texture.
- You can substitute autumn squash with butternut or acorn squash for similar results.
- Adjust seasoning to taste; herbs like thyme or rosemary can be added for different flavor profiles.
- Use low-sodium chicken broth to control salt content.
- This soup can be stored in the refrigerator for up to 3 days and reheated gently on the stovetop.
